WINE WRITER DAVID WHITE – AUTHOR OF BUT FIRST, CHAMPAGNE: A MODERN GUIDE TO THE WORLD’S FAVORITE WINE

ABOUT DAVID:
David White is one of the world’s leading wine writers. A contributor to Grape Collective, David is the founder and editor of Terroirist.com, an award winning wine blog. His writing has appeared in dozens of publications, including The World of Fine Wine, the New York Times, the Los Angeles Times, the Washington Post, and Punch. He has appeared on a number of TV and radio programs, including NPR’s All Things Considered. His first book, But First, Champagne: A Modern Guide to the World’s Favorite Wine, will was published in October.

AUTHOR OF:
But First, Champagne: A Modern Guide to the World’s Favorite Wine
Both the region of Champagne and its wines have always been associated with prestige and luxury. Knowledgeable wine enthusiasts have long discussed top Champagnes with the same reverence they reserve for the finest wines of Bordeaux and Burgundy. But everyday Americans usually keep Champagne way back on the high shelf. It’s for big celebrations, send-offs, and wedding toasts and, more often than not, is bought by the case. The good stuff costs plenty—and frankly, rarely seems worth the price.

Today, though, Champagne is in the midst of a renaissance—no longer to be unjustly neglected.

Over the past decade, an increasing number of wine enthusiasts have discovered the joys of grower Champagne—wines made by the farmers who grow the grapes. Thanks to a few key wine importers and America’s newfound obsession with knowing where food comes from, these shipments have been climbing steadily.

In But First, Champagne, author David White details Champagne’s history along with that of its wines, explains how and why the market is changing, and profiles the region’s leading producers.

This book is essential reading for wine enthusiasts, adventurous drinkers, foodies, sommeliers, and drinks professionals. With a comprehensive yet accessible overview of the region, its history, and its leading producers, But First, Champagne will demystify Champagne for all.

From the foreword:

"Smart, entertaining, and valuable . . . one of those rare wine books that should appeal to people just getting into Champagne and longtime Champagne obsessives." —Ray Isle, Executive Wine Editor, Food & Wine

12/29 DR. JOE ALTON, HOW TO AVOID/RECOVER FROM A NEW YEAR'S HANGOVER

DR. JOE ALTON - DISASTER PREPAREDNESS EXPERT & AUTHOR - HOW TO AVOID/RECOVER FROM A NEW YEAR'S HANGOVER

For you teetotalers, a hangover is a group of symptoms that occur in many people after a night of drinking. Hangovers vary in appearance and severity, but one thing is sure: You'd rather not have one. Consider these options as you try to pick yourself off the floor:

  • Drink some fluids.
    • You're dehydrated, and some water, Gatorade, or juice (without alcohol, please) will help you recover faster. Skip acidic juices like orange juice; they won't help your upset stomach.
  • Go back to bed.
    • The more sleep you can get, the more you'll sleep through some of the worst part of a hangover
  • Take a headache medicine.
    • Ibuprofen can help your headache, but it can irritate  your stomach. Tylenol might be a better choice, but is associated with liver disease if you're a heavy drinker.
  • Eat something.
    • You might be nauseous, but a little chicken broth and some crackers will help settle your stomach and give your blood sugar a boost. Some prefer dry toast with a little peanut butter. Pepto-Bismol (Bismuth Subsalicylate) isn't a bad idea to deal with that stomach upset as well.

The above measures are thought to be of medical benefit for hangovers, but there are a lot of home remedies that people swear by. Below are just a few.
  • Ginger:
    • Ginger root is a time-honored natural remedy for nausea and vomiting, and many people feel seasick when they have a hangover. Ginger Ale is the easiest way to ingest some, but a ginger tea may be even better.
  • Honey and Lemon:
    • Ingredients of a hot toddy (hold the alcohol), mixing some honey and lemon will boost your blood sugar.
  • Vitamin B6:
    • A 1973 study found that Vitamin B6, in large doses, can improve a hangover. Later studies, however, found no such benefit and possible risks to the liver and pancreas. Vitamin B-complex, a combination of B1 (thiamine), B2 (riboflavin), folic acid, B6 and B12 has also been proposed as a cure. It isn't, but a dose of a vitamin supplement probably won't hurt you.
  • Exercise:
    • If you can't even move after a night of drinking, how can you exercise? Some feel, however, that sweating out the toxins will help a hangover. If you do decide to exert yourself, hydrate well beforehand and keep it to low-impact activities or you might be worse off than before. How about trying a walk around the block first?

Hangover Prevention Tips

An ounce of prevention is worth a pound of cure, and that is the honest-to-God's truth when it comes to hangovers. Make sure to:

  • Eat before you drink: Drinking on an empty stomach equals big trouble. Beer has calories, but it's not dinner. Having a full stomach before drinking may help you keep your blood alcohol level down.
  • One alcoholic drink, one non-alcoholic: Matching one Old-Fashioned with one glass of water will help keep your alcohol intake down and decrease your chances of a hangover in the morning.
  • Pick the right poison: If you're not picky about your poison, try to stay away from dark liquors like, say, bourbon. These have more congeners and are more likely to cause hangovers than clear liquors like vodka. Clear liquors are less associated with severe hangovers.
  • Be Bubble-Free: Alcohol in carbonated drinks, like Champagne, may be absorbed more quickly and lead to worse hangovers.
  • Head it off at the pass: Take two aspirin with a full glass of water before going to bed. Fatty acids that reduce inflammation in aspirin can avoid a bad hangover.
  • Abstain: Do I really have to say why? If you really don't want a hangover, don't drink. Be the designated driver.

LARRY LIPSON – AFFORDABLE WINE REPORT

For fifty years Larry Lipson was the food critic for the Los Angeles Daily News and now reports from Florida weekly with his thoughts and favorite picks for Food & Wine.  His lovely Wife Lillian is also on hand at the Lipson Institute for advanced wine studies.

STEPHEN HAHN-GRIFFITHS OF THE REPUTATION INSTITUTE & CATHERINE BLADES OF AFLAC TALK ABOUT THE IMPORTANCE OF CORPORATE RESPONSIBILITY

ONE IN FIVE CONSUMERS ARE WILLING TO PAY MORE FOR A PRODUCT IF IT COMES FROM A SOCIALLY RESPONSIBLE COMPANY

NEW SURVEY ANSWERS THE QUESTION: WHAT IS YOUR REPUTATION WORTH?

Talk to Stephen Hahn-Griffiths of the Reputation Institute & Catherine Blades of AFLAC about the Importance of Corporate Responsibility

Billionaire Warren Buffet famously said that “It takes 20 years to build a reputation, and five minutes to ruin it.  If you think about that, you’ll do things differently.” As we begin approach the promise of a new year, Mr. Buffet’s words provide a reminder for businesses and consumers about the importance of a strong reputation. On December 28th, we have a unique interview about corporate social responsibility (CSR) and reputation that will examine why it really does pay to practice CSR. Recently, Aflac commissioned a unique scientific study on the topic of corporate social responsibility, asking more than 1,400 consumers and investors about their views on corporate integrity, philanthropy and how it might influence their decisions. The results will be shared by two top leaders from the Reputation Institute and Aflac. It’s a unique discussion that will fascinate your viewers and listeners.
SOME SURPRISING RESULTS OF THE CSR STUDY, INCLUDE:

  • 75% of consumers are likely to take some negative action toward irresponsible companies
  • A company seen as not responsible stands to lose as much as 39% of its potential consumer base
  • 1 in 4 consumers will tell their friends and family to avoid a company that is seen as not responsible
  • 81% of consumers are more likely to purchase products from a company active in philanthropic efforts year-round, rather than just in times of need

12/27 GARY CANTER, CANTER'S DELI, HEATHER MURAN, SLO WINE COUNTRY

GARY CANTER – CANTER’S DELI - CANTER’S DELI RETURNS TO LAS VEGAS

Since 1931, Canter's has been serving up LA's finest deli cuisine. Voted the best pastrami by the LA Times and LA Weekly, Canter's prides itself on delivering the amazing experience that has kept its clientele returning over-and-over again for decades. This culinary landmark is lovingly managed by the third- and fourth-generations of the Canter family, who take a hands-on approach to ensure the highest quality in every aspect of the restaurant. Whether it's the freshly-baked breads, or the famous house-made pickles, Canter's always goes the extra mile to provide the authentic, traditional Jewish deli experience, which helped grow the restaurant from a small storefront to the massive operation that it is today. As inviting as its food, Canter's is also known for its welcoming ambiance, a perfect blend of contemporary comfort with the nostalgic charm of its stylish 1950's decor. Canter's continues to stand out as a unique dining experience that transports patrons back to the golden age of delis.

Canter's Deli is one of California's oldest delis. Located in Los Angeles' Miracle Mile District -the heart and soul of the entertainment industry - Canter's Delicatessen is a third-generation family-run business whose owners have an intense pride in their deli and a hands-on work ethic.

It all began in Jersey City, New Jersey in 1924. After losing a deli in the 1929 stock market crash, Ben Canter and his two brothers moved to California with just $500 in their pockets.Eager to succeed, they opened up a Canter Brother's Delicatessen in 1931 in Boyle Heights, the Jewish center of Los Angeles.

When the character of the neighborhood changed, Ben Canter's daughter, Selmo Udko, and her then husband, Harold Price, partnered with Ben Canter and his wife, Jennie, to purchase a prime location at 439 North Fairfax Avenue. And instead of calling it Canter's Brothers they called it Canter's Fairfax.

In 1953 this new team purchased the old Esquire Theatre at 419 North Fairfax and moved Canter's Deli just up the street to the larger location.

For over seventy-five years now this third-generation family-owned business has served food to locals, tourist, and celebrities alike. With its Art Deco décor and its trademark autumn leaves ceiling, this hangout has hardly changed in its over half century at its current location.

Canter's has also become a favorite whistle stop for hot political contests. Mayor Bradley, Governor Deukmejian, Rudy Giuliani, and Bill Simon have gone from booth to booth introducing themselves to our customers. And with CBS studios just up the block, celebrities frequent Canter's every day. Our catering department caters to many television shows and movies, as well as catering their wrap parties.

Over the years, many celebrities have passed through our doors. In the 50s Marilyn Monroe and Arthur Miller ate here, as did Jack Benny and Elizabeth Taylor. Other celebrity noshers include Sydney Poitier, Mel Brooks, Wilt Chamberlain, Charlene Tilton, Brooke Shields, Jacqueline Bisset, Catherine Oxenberg, John  Travolta, Prince, Stevie Wonder, Buddy Hackett, Olivia Newton John, Muhammad Ali, Monty Hall, Bill Cosby, David Brenner, Rodney Dangerfield, Dick Van Dyke, Shelly Winters, Elizabeth Montgomery, The Cars, Henry Winkler, and Greg Morris. The producer of Miami Vice, Michael Mann, wrote here for hours at a time when he was writing for Vegas. The Neil Simon movie, "I Ought to be in Pictures", with Walter Matthau was filmed here. Many celebrities who prefer to go "incognito" sneak in around 3:00 am for a late night nosh!

Canter's is also part of the larger Los Angeles community having received numerous awards from such institutions as the City of Hope, appreciation letters for outstanding and dedicated service, and letters from Jerry Lewis and the Muscular Dystrophy Association thanking Canters for donating food.

Canter's Delicatessen continues to be a Los Angeles landmark and late night hot spot, and, with the 2003 addition of Canter's Deli at Treasure Island in Las Vegas, we are committed to bringing the best delicatessen food to our noshers on the famed Las Vegas Strip and to Dodger fans at Dodger Stadium.

HEATHER MURAN – EXECUTIVE DIRECTOR, SAN LUIS OBISPO WINE COUNTRY

The wineries of SLO Wine Country boast an average distance of just five miles from the Pacific Ocean, resulting in prevailing marine conditions that are among the most pronounced of any wine region in California.

SLO Wine Country includes two small adjoining American Viticultural Areas—the Edna Valley and Arroyo Grande Valley—and other nearby winegrowing areas.  Each of these areas shares a unifying proximity to the ocean, as well as to each other. Collectively, these growing conditions forge a unifying wine quality that is native to SLO Wine Country:

Cool
The reliable cooling effect of the nearby Pacific Ocean ensures a long growing season, enabling the grapes to achieve physiological ripeness and natural balance. Cool-climate varietals such as Chardonnay and Pinot Noir excel in the heart of SLO Wine Country, and even the warmest areas benefit from considerable marine influence.

Consistent
The ocean proximity also exerts a moderating effect on the climate, minimizing temperature swings so that growing conditions are rarely hot or cold. The result is an extraordinarily steady growing season that fosters balanced ripening and consistent quality from vintage to vintage.

Complex
The imprint of the ocean is also evident in SLO Wine Country's uncommonly complex soils, which are frequently riddled with ancient sea fossils. Soil variation enables the winegrower to mix and match varietals to specific soil profiles, or to add more "colors" to the palette of a single varietal, heightening overall quality and complexity.

12/22 CHEF JEFF, SEASONAL RECIPES FOR YOUR HOLIDAY SOIREE, CANOLI, IAN BLACKBURN, WINE LA, BEEKEEPER CELLARS

CHEF JEFF SHARES SEASONAL RECIPES FOR YOUR HOLIDAY SOIREE

Chef Jeff’s Family Canolli Recipe

Makes approximately 5 dozen canolli

Shells:
3 Cups All Purpose Flour
1/4 Cup Sugar
1/4 tsp. Salt
1 Tbs Cinnamon
3 Tbs Shortening (ice cold)
2 Eggs
1/2 Cup White Wine

Think pie crust and pasta making when you combine these ingredients.

Sift together flour, sugar, salt, and cinnamon.  Cut in the shortening very well (can be done in a food processor). Whisk together the eggs and wine and add to dry ingredients.  Combine well, but don’t overdo it.  Place dough in a zip top bag and refrigerate for at least 2 hours to allow the dry ingredients to hydrate.

This next step helps if you have an assistant working with you: Heat oil (using an electric fryer or heavy pot with a thermometer) to 350.  Lard works best, but peanut oil or some other vegetable oil with a high smoke point is also nice.  Roll out portions of dough to about 1/16” thick.  My trick is I use a pasta machine and work the dough down to the 2nd to last setting.  Use a 4” circle cutter to cut rounds out of your dough.  Wrap the rounds onto canolli forms.  I use wood dowels 3/4” thick*.  You can also purchase metal forms on the internet, but they do not work as well.  Seal the dough with egg wash (50/50 egg and water). Fry until golden.  Remove to briefly cool onto a layer of paper towels.  Once cool enough to handle, but not completely cool, remove the forms carefully.  I do this by holding the end of the form with a paper towel, and holding the shell with another paper towel and gently pulling. Allow to cool completely on wire cooling racks.  Store in zip top bags, in single layers.  I don’t recommend refrigerating or freezing.  They’ll last for several weeks just sealed up in the bags.

Filling (enough for about 18 shells):
1 Lb Ricotta Cheese**
1/4 cup powdered sugar, sifted
1/4 tsp. salt
1/4 tsp. Cinnamon
1 & 1/2 tsp. Vanilla
3-4 oz. Chocolate, finely chopped (the finest quality makes a difference here)
1-2 Tbs. “Nuclear Fruit***” finely chopped

Garnish:
Finely chopped pistachio nuts

Mix ricotta on medium speed in a stand mixer until smooth.  Set stand mixer to low and gradually add in powdered sugar, one spoon at a time, until it’s all incorporated.  Turn off your mixer and scrape down your bowl.  Add in the salt, cinnamon, and vanilla, and mix on low until incorporated.  While mixer is going, add in your chocolate and nuclear fruit.  Turn off your mixer and give the bowl a last scrape.  Mix on low once more.  This filling can be stored, usually in the ricotta container, in the refrigerator for 3-4 weeks.

To fill and serve:
Place about 1/2 of the filling in a quart-sized zip top bag.  Cut a small piece off the corner of the bag.  Squeeze the filling out of this hole into the shells.  Dab the ends of the filled canolli into the chopped pistachios.  Dust finished canolli with powdered sugar.

*My grandfather made forms out of a broomstick, which he cut into 6” lengths, and soaked in whiskey for a week.  I’m not sure what the whiskey does to the wood, but that’s the story.

**Not all ricotta is created equal.  You don’t want your ricotta runny or loose.  The thicker the better for this recipe.  No matter which brand I buy, I find that emptying the ricotta into a colander lined with a paper towel, over a bowl, and leaving it in the refrigerator overnight does the trick.

***Nuclear fruit is a term I use for the candied fruit that grocery stores carry around the holidays for people to use in fruitcake recipes.  Unfortunately, it isn’t much good in fruit cake.  Look for the type of fruit that has red and green cherries, as well as pineapple.

ABOUT BEEKEEPER CELLARS
Beekeeper Cellars is the vision of best friends and co-winemakers Ian Blackburn and Clay Mauritson. The two collaborated after adventurous individual careers in the wine business, and at last, decided to work together on a project of their own.

Clay, a 7th generation grape grower, and his family found themselves the owners of a significant slice of the Rockpile Appellation, through an amazing set of historical land transactions. The Mauritson family realized the potential and parented the creation of the ROCKPILE AVA. In 1998, Ian and Clay climbed the hill and watched the Madrone Spring Vineyard get planted, while discussing the future of Rockpile and the dream it represented.

In 2008, Clay saw the fruits of his family's labor taking shape and came to Ian with a unique opportunity to source some of the Rockpile fruit. He told Ian in the difficult days of 2008, “now is the time to get in and build the business and have it take shape as the market improves, and to not wait until business is strong as you will have a hard time getting access to the right quality assets.” Ian took heed of Clay’s wise comment and said "When your best friend is Clay Mauritson and he offers Rockpile fruit and to assist with winemaking…... you make Zinfandel.”

In Los Angeles, Ian operates a specialty wine marketing organization known as wineLA and has pioneered wine education for the past 20 years (since 1995) through www.learnaboutwine.com and www.wineLA.com.  Beekeeper Cellars is also involved in Ian’s Masters of Wine Thesis project and provides him the winemaking training he requires to help pass the difficult Masters of Wine exam...an ongoing pursuit.

JOHN SCHNEIDER, VICE PRESIDENT OF PRODUCT MARKETING, JIVE SOFTWARE - RISE OF THE MACHINES: HOW ARTIFICIAL INTELLIGENCE (AI) IS CHANGING THE WAY WE DO BUSINESS

Do today’s sci-fi films and TV shows have you worried about a future when androids plot to destroy humanity? In reality, Artificial Intelligence (AI) circa 2016 is far more likely to recommend titles to your Netflix queue than to take over the world.

Today’s AI is working to make our lives and jobs easier, helping organizations manage and streamline workflow. While machine learning is making inroads into the massive amounts of data that's being collected, it's still mostly up to humans to make the tough calls based on the analysis of that information. Expect that to begin to change in 2017.

12/13 PATRIK PETR, CRYSTALITE BOHEMIA, KELLY PAGE TEAMS UP WITH KODAK, JOE MINOSO, BE BURN AWARE CAMPAIGN, CHICAGO FIRE

PATRIK PETR - MANAGING DIRECTOR USA AT CRYSTALITE BOHEMIA

Crystalite Bohemia s. r. o. was established in October 2009 and, at present, it owns two production plants. The first one is the glass factory in Světlá nad Sázavou with fully automated production of beverage and decoration glass (the glass factory was established in 1967); the other is the Květná glass factory based in Strání (established in 1794) where glass is still manufactured manually even today and, in addition, the glass is decorated using various techniques. At present, the company has more than 800 employees working in the two production plants, generating a turnover of close to EUR 37.5 million per year. A vast majority of their products are headed abroad, as the company currently exports to more than 72 countries worldwide.

An environmentally friendly crystallite glass melt has been used for many years to manufacture the entire range of products, as it does not contain any lead compounds and, since recently, includes also titanium guaranteeing a greater resistance of the final product. This glass melt offers top-class parameters such as Czech crystal and high lifetime, and can also be washed in a dishwasher without the risk of grey fading. Products made of this material will thus be stronger, more resistant to a higher number of cycles in the dishwasher, with an improved light refraction and the glass is even more abrasion resistant.

Both plants work in synergy nowadays. In addition to the manufacturing, the Světlá plant accommodates also the commercial and administrative base of the entire company, while the Květná plant deals with decorations, engraving or grinding of both beverage and decoration glass not only from Květná itself, but also of glass made on the automatic lines in Světlá nad Sázavou.

ACTOR JOE MINOSO - BE BURN AWARE CAMPAIGN WITH SHRINERS HOSPITALS FOR CHILDREN

Many Americans Do Not Practice Important Fire Safety Tips in Homes, Despite High Awareness

Shriners Hospitals for Children survey uncovers dangerous habits  that could put families at risk during holiday season

According to an independent survey commissioned by Shriners Hospitals for Children®, many do not follow key fire and burn safety tips during the holiday season, which can be the most dangerous time of year.

The national survey, conducted as part of the Shriners Hospitals for Children annual Be Burn Aware campaign, polled adults across the nation on their fire safety knowledge and practices. Although overall awareness was high, the survey revealed several gaps in action. The largest gap was associated with live Christmas trees, one of the most dangerous fire hazards in homes during this time of year. More than half of those surveyed said they do not water trees daily, even though nearly three-quarters of respondents were aware of the life-saving practice.*

Candle and cooking accidents account for a large portion of house fires and injuries, but the study revealed Americans are not taking simple steps to keep their homes safe. One-quarter of Americans surveyed said they leave lit candles unattended, and slightly more leave them in reach of children. The survey also found that two of the simplest prevention tips are often not followed in the kitchen – turning pot handles to the back of the stove and keeping a cookie sheet nearby to extinguish a fire.

THE SURVEY RESULTS ALSO SHOW:

  • 70 percent are aware that live Christmas trees should be watered daily, but only 45 percent actually do.
  • 25 percent leave lit candles unattended in their homes.
  • 27 percent leave lit candles within the reach of children.
  • 47 percent do not keep a lid or cookie sheet nearby when cooking to extinguish a fire.
  • 25 percent do not turn pot handles to the back of the stove and out of children’s reach.

To help reduce fires and burns, Shriners Hospitals for Children is spreading important prevention messages through its Be Burn Aware campaign. Public service announcements, featuring actor Joe Minoso from the NBC hit show Chicago Fire, urge families to take precautions like watering live Christmas trees daily to reduce fire risks. The hospital system also has activity books, tip cards and a five-minute online quiz to help families avoid holiday injuries at beburnaware.org.

HOTWIRE PRESIDENT HENRIK KJELLBERG - 2017 WILL BE THE “YEAR OF CHOICE” FOR U.S. TRAVELERS

TRAVEL PREDICTION: 2017 WILL BE THE “YEAR OF CHOICE” FOR U.S. TRAVELERS

Your rainy day fund is full.  You’ve arranged for time off from work.  Your new luggage has arrived.  But now what.  Where to go and more importantly, where to stay?  Hotel? Bed and Breakfast? Homestay rental?  Air bnb?  The choices keep growing – and that is a good thing.

The landscape for consumers to book travel lodging is continuing to evolve thanks to online travel agents (OTAs) like Hotwire.com alongside peer-to-peer online marketplace and homestay networks, which have risen in popularity in recent years.

Positive experiences with alternate accommodations, like Airbnb,  are becoming more mainstream. This has helped to increase consumer confidence in booking different types of trips. These growing options have also resulted in a greater supply of available hotel rooms.  This surplus is good news for travelers as the rates to secure great lodging will be lower in 2017 than 2016.

In fact, it is expected that 2017 will be “the year of choice” for booking travel lodging. This is exciting news  since it will enable more U.S. travelers to be “slightly adventurous” and allow consumers to take even more trips.

Henrik Kjellberg will talk about the benefits of researching and booking your vacation on-line this holiday season as well as the changes and trends coming up in 2017.

Also, learn how Germany started the Christmas tree tradition, as we now know it, in the 16th century when devout Christians brought decorated trees into their homes. Some built Christmas pyramids of wood and decorated them with evergreens and candles if wood was scarce. In the past, Avery also co-hosted the HGTV show “I WANT THAT!” which highlighted the hottest “must-haves” products for the home. She is the creator of www.giftexpert.org, which features excerpts from her book and gift advice.
