The FDA and EPA recently released a new guide to fish consumption. Unfortunately, it’s not helping people, it’s only scaring them away from eating fish altogether. The FDA has created a list of “Best Choices”, “Good Choices”, and “Choices to Avoid”. Among the choices to avoid is bigeye tuna, which is confusing people, thinking not to eat any tuna all together.

Sean Wittenberg, the co-founder of Safe Catch, is an expert in the seafood industry who can help clear up the confusion of the FDA and EPA’s new seafood guidelines and educate consumers about the fish they can eat.

Flu season is here and is extremely contagious.  An estimated 20% of Americans suffer from the flu and flu-like symptoms, with kids being the most susceptible group of all, but adults still at risk to get sick this time of year.   It can spread easily to others, especially in places like day-care centers, schools, cruise ships and nursing homes. If all of this sounds familiar to those of you who laid viciously low over the holidays. It’s because the arrival of cold weather usually coincides with an increase in one of winter's most dreaded horrors: noroviruses and respiratory viruses.

Experts agree that the flu rate this year is about three times higher than last year, and it hasn't reached its peak yet. Even among the vaccinated, incidence of flu-like symptoms is at an all time high. Registered Pharmacist and News Correspondent Jim Morelli has easy tips on how to prevent the flu and reduce the length of the flu in case you catch it.

3 carrots, scrubbed well, tops removed, ends trimmed
2 ribs of celery with leaves
1 handful of spinach
1 cucumber, peeled if not organic
1/2 green apple

Cut produce to fit your juicer’s feed tube. Juice all ingredients and stir. Pour into
a glass and drink as soon as possible. Serves 1.

GREEN MUSCLE MENDER
Are you strength training? Spinach helps your muscles recover.

1 large handful spinach
1 green apple
1 cucumber, peeled if not organic
1-inch-chunk ginger root
2-inch-piece fresh turmeric root (optional)

Juice all ingredients, stir, and enjoy! Serves 1.

GET YOUR GINGER GREENS ON
One study found that people who took 2 grams of ginger a day saw improvement in muscle pain.

1 green apple
1/2 large fennel with fronds
1-inch-piece ginger root
1 large broccoli stem
1 rib celery
3 leaves kale

THEN CHEF JEFF JOINS IN TO SHARE HIS FAVORITE GAME DAY SNACK RECIPES!

 Chef Jeff's Super Bowl Jalapenos

-2 dozen fresh Jalapeno peppers, washed, split length wise, seeds and veins removed with a spoon, stems left on.
-1 block (8 oz.) full-fat cream cheese softened at room temperature
-2-3 oz. Chorizo sausage, crumbled or chopped very fine (soy chorizo may be substituted without a problem)
-2-4 oz. shredded mozzarella cheese

Preheat oven to 350. Thoroughly mix the softened cream cheese, 2-3 oz of mozzarella, and chorizo in a bowl. Fill the prepared jalapenos with the cream cheese mixture to the top - do not mound. Place the filled peppers onto a foil lined baking sheet and top with remaining mozzarella.  Bake for 25-30 minutes, or until the cheese is bubbly and becoming golden.  Remove from the oven and let rest for at least 20 minutes before enjoying.

Riverbench Vineyard was established in 1973, when the first Chardonnay and Pinot Noir grapes were planted on the bank of the Sisquoc River, known as the Santa Maria Bench. For decades since then, some of the most renowned wineries have purchased our fruit for their wines. In 2004, we began producing our own wines in limited quantities, with many available exclusively through our tasting rooms in Santa Maria and Santa Barbara, California.

Situated on the southeastern edge of the Santa Maria Valley, the northernmost AVA in Santa Barbara County, the vineyard currently consists of 107 acres of Pinot Noir and 77 acres of Chardonnay. We continually evaluate the vines as they age, replanting as necessary.  In 2008, we committed ourselves to our premium sparkling wine program. We continue to work hard making wines that are inspired by Champagne in France. In 2015, we added the third great grape varietal famous in that area, Pinot Meunier, to our vineyard. We anticipate incorporating these grapes into our sparkling wine blends beginning in 2017.

The Santa Maria Valley is an appellation known for its diverse microclimates and ideal conditions for growing Burgundian varieties. This distinct wine region is characterized by the valleys in our Pacific coastline which run east to west instead of the more common north to south. Such a geographic peculiarity channels the cool ocean breezes inward, resulting in a mild and moderate climate where Pinot Noir and Chardonnay thrive.

Yet, after all of these thousands of years we are still finding new ways to combine the same four basic ingredients - milk, bacteria, salt, and enzymes - into new and exciting products with vastly different shapes, sizes, and colors, and equally complex and varied tastes, textures, and, yes, aromas. In fact, after a long period of industrialized, processed, and standardized cheese, cheesemakers, cheesemongers, affineurs, and most of all consumers are rediscovering the endless variety of cheeses across cultures.

The Oxford Companion to Cheese is the first major reference work dedicated to cheese, containing 855 A-Z entries on cheese history, culture, science, and production. From cottage cheese to Camembert, from Gorgonzola to Gruyère, there are entries on all of the major cheese varieties globally, but also many cheeses that are not well known outside of their region of production. The concentrated whey cheeses popular in Norway, brunost, are covered here, as are the traditional Turkish and Iranian cheeses that are ripened in casings prepared from sheep's or goat's skin. The Companion also reflects a fascination with the microbiology and chemistry of cheese, featuring entries on bacteria, molds, yeasts, cultures, and coagulants used in cheesemaking and cheese maturing. The blooms, veins, sticky surfaces, gooey interiors, crystals, wrinkles, strings, and yes, for some, the odors of cheese are all due to microbial action and growth. And today we have unprecedented insight into the microbial complexity of cheese, thanks to advances in molecular biology, whole-genome sequencing technologies, and microbiome research. The Companion is equally interested in the applied elements of cheesemaking, with entries on production methodologies and the technology and equipment used in cheesemaking.

An astonishing 325 authors contributed entries to the Companion, residing in 35 countries. These experts included cheesemakers, cheesemongers, dairy scientists, anthropologists, food historians, journalists, archaeologists, and on, from backgrounds as diverse as the topics they write about. Every entry is signed by the author, and includes both cross references to related topics and further reading suggestions. Jim Striegel began his love of wine at an early age while making wine with his father.  They shipped a variety of grapes from Napa Valley, California to their hometown of Carbondale, Illinois and enjoyed red table wine with family and friends. Jim enjoyed summers in the Napa Valley areaa with childhood friends when there were only ten wineries in the area, including Stag's Leap.  They would hang out in the vineyards and the cellars, experiencing the rich traditions that come along with it, including the annual "blessing of the grapes".

With over forty years of experience in sales and marketing, Jim has built many successful businesses in the apparel, automobile and real estate industries.  He worked for Izod Lacoste in Paris in the eighties and was able to further his wine education in both the Burgundy and Bordeaux regions of France. When he was ready to begin his own brand, he called renowned winemaker Heidi Barrett.  In addition to being a huge, longtime fan of Heidi's winemaking, he worked with her on a wine dinner in the Dallas area and trusted her advice and guidance.  It was through Heidi that he met winemaker and partner Anne Vawter and the rest is history.

Beekeeper Cellars is the vision of best friends and co-winemakers Ian Blackburn and Clay Mauritson. The two collaborated after adventurous individual careers in the wine business, and at last, decided to work together on a project of their own.

Clay, a 7th generation grape grower, and his family found themselves the owners of a significant slice of the Rockpile Appellation, through an amazing set of historical land transactions. The Mauritson family realized the potential and parented the creation of the ROCKPILE AVA. In 1998, Ian and Clay climbed the hill and watched the Madrone Spring Vineyard get planted, while discussing the future of Rockpile and the dream it represented.

In 2008, Clay saw the fruits of his family's labor taking shape and came to Ian with a unique opportunity to source some of the Rockpile fruit. He told Ian in the difficult days of 2008, “now is the time to get in and build the business and have it take shape as the market improves, and to not wait until business is strong as you will have a hard time getting access to the right quality assets.” Ian took heed of Clay’s wise comment and said "When your best friend is Clay Mauritson and he offers Rockpile fruit and to assist with winemaking…... you make Zinfandel.”

Chef and food expert Christopher Czarnecki shares details of how his family restaurant has been around for 100 years and industry trends in regards to soup.

About Joel Palmer, the Oregon Pioneer
Joel Palmer was one of Oregon’s preeminent pioneers who left Indiana in 1845 to make his long way West. As leader of one of three wagon trains headed for Oregon, Palmer soon exhibited the leadership qualities for which he became famous. Joel Palmer co-founded the town of Dayton in 1848 and built this home in 1857. It is said that the town of Dayton is named after the hometown of Chris Taylor, a close friend.

The Czarnecki Family
Our family business took shape when my great-grandfather, Joseph Czarnecki, opened Joe’s Tavern in 1916 in Reading, Pennsylvania. His son, Joseph Jr., carried on the tradition, transforming the original tavern into Joe’s Restaurant and changing the focus to fine dining and wine with wild mushrooms (a family passion) as the centerpiece. My father, Jack Czarnecki, followed in his father’s footsteps, taking Joe’s Restaurant to a new level while maintaining the mushroom theme. My parents’ dream to combine fine cuisine, great mushroom hunting, and world-class wine was fully realized in 1996 when they purchased The Joel Palmer House and moved the restaurant West.

Christopher Czarnecki's commitment to fine dining was imprinted on him early, literally from the age of 9, when he was allowed to fill the water glasses at his parents' restaurant - originally called Joe’s Restaurant and located in Reading, PA and now, The Joel Palmer House, a landmark in Oregon's wine country. The world of his childhood was a world of fresh local ingredients, fine wines, busy kitchens, and grateful, happy diners – a world he knew he would inhabit as an adult. Czarnecki stepped out of that world for three years in 2003, when he joined the Army, working in food service, including a year of service in Iraq. During the time when Christopher was “cooking in combat boots” he learned the art of precision, and of course, following the rules. Christopher’s covert attempt at spicing up a dish with herbs and butter at one dinner only earned him 50 pushups, rather than the certain gratitude of his comrades. Chris regards his time in the dining hall as a learning opportunity, and was happy to return to a region where his creativity is fed and supported by the abundance of the area. Beginning in 2006, Christopher made his way back to The Joel Palmer House kitchen, taking over the reins from his father, Jack Czarnecki, as chef in 2007. His parents retired in 2008. In 2014, Chris and his wife, Mary, opened their 2nd restaurant, "The Barlow Room" in Dayton. Designed from the ground up to complement The Joel Palmer House, this new venue is open for lunch, on Sundays, and for special events and catering. The historic bar, casual menu, family friendly atmosphere, craft beers and cocktails make this the go-to local hang out for locals and winery folks. Czarnecki revels in the bounty of the restaurants' location in Dayton, in the heart of Oregon's Pinot Noir country. Czarnecki continues the family tradition of cooking with wild mushrooms, building his menu around whatever local mushrooms his foragers bring to the back door of the kitchen, along with other seasonal specialties. Czarnecki and his wife, Mary, are building their own vegetable gardens in order to provide “hyper-local” produce to the restaurant as well as a mushroom cultivation patch on the property. On the wine side, the cellar at The Joel Palmer House reflects Czarnecki's passion for the best local wines. With more than 500 Oregon Pinot noir wines on the list, and a Wine Spectator “Best of” Award of Excellence since 2010, Christopher often spends time in the cellar with a glass of Pinot noir reflecting on the life he’s built in The Joel Palmer House.
