Randy Rice - Director Alaska Seafood Marketing Institute
As the seafood technical program director for the Alaska Seafood Marketing Institute (ASMI), Randy Rice has traveled extensively speaking on topics of food safety, fisheries sustainability, and ecological issues associated with seafood consumption. A former commercial fisherman in Alaska for nineteen years for halibut, shrimp, and salmon, Randy now works with the Alaska seafood industry on issues of food labeling, health claims, traceability, seafood quality and safety. In recent months, Randy has been intensively involved with issues of seafood sustainability. He worked six years with the Alaska Department of Fish & Game (ADFG), and seven years with the Alaska Department of Environmental Conservation (ADEC). While with the ADEC, he was a specialist in water quality and contaminants. As over-fishing endangers many of the world’s fish populations, it is important to note that there is a source of wild salmon that is also sustainable. And the best part? It is found right here in America - in our 49th State…ALASKA!

Eddie, 30 (Los Angeles, Calif.), expands his culinary knowledge by working as an apprentice in a Los Angeles restaurant. After graduating from Vanderbilt University with two degrees, Eddie worked at a prestigious talent agency before turning his love for cooking into a career. The travel, sports and music enthusiast enjoys modernizing traditional dishes and making them more accessible for the home cook.

Fabio is the Owner and Executive Chef of Café Firenze Italian Restaurant and Martini Bar, one of the most recognized restaurants in Ventura County. Born and raised in Florence, Italy, he has traveled across Europe and is trained in classic Italian and Mediterranean cuisine. He incorporates Italian, French and Spanish influences in his dishes and believes that cooking is a craft. He is currently working on opening the Firenze4Kids Foundation, which will emphasize the promotion of health and wellness for kids through good nutrition and will also launch kidshealthcafe.com, the largest informative resource library available online, designed to enhance a healthy and safe lifestyle for children. Additionally, Fabio also works as William Shatner's private chef. Originally from Italy, Fabio now resides in the Anaheim, CA area - he has his own cookbook out now, and is working on another one with his mother.
