10/27 Williams Selvem Winery, Steve McQeen Biography

10/27 What's Cookin' Today

Here To Share With Us The Newest Events At The Williams Selyem Winery Is Bob Cabral Director Of Winemaking & General Manager Williams Selyem

Bob Cabral has been involved in growing and making wine professionally since 1980 and has had an interest in wine and farming since his childhood helping his grandfather make wine in his barn. Growing up pruning grapes, irrigating vineyards and harvest became routine on his family’s 70 acre ranch near Escalon, CA. A fourth generation farmer and grape grower from the great San Joaquin Valley, he took all he learned at the family farm and applied it to his degrees at Fresno State University. His passion for pinot noir was evident very early on as he would spend every spare dime, and good chunk of his student loans, on buying wine from all over the world—especially Burgundy and Russian River Valley pinot noir. One of the first North Coast wineries he became passionate about was Williams Selyem. He joined their consumer list during graduate school in 1985 as customer #576, soon after experiencing the Williams Selyem 1983 vintage wines.

In the mid 1980’s while working at a large winery south of Fresno, Bob knew that Sonoma County was where he could best hone his skills and learn to make wines that could rival the best made anywhere in the world. He worked the next 11 vintages in various winemaking positions as the Associate Winemaker at De Loach Vineyards, Custom Crush Winemaker at Kunde Estate Winery, Winemaker at Alderbrook Vineyards and Winemaker at Hartford Court Winery. In 1998 Burt Williams recommended that Bob take over for him as Winemaker at Williams Selyem. Bob met with John Dyson, then the new owner of Williams Selyem, and discovered that they shared a similar philosophy about winemaking and viticulture: that the most important aspect of winemaking is in the vineyard. Bob became the winemaker at Williams Selyem July 29, 1998.

Heading into his 14th vintage at Williams Selyem and 32nd at a commercial winery, his winemaking philosophy has not changed: “The key is to respect the vineyard and value the fruit. Working with some of the best growers and vineyards in the world allows us to farm to the highest possible standards and provides us with the finest fruit available. That’s more than half the battle in working with Pinot Noir. Once the fruit is taken care of, then we try to intervene as little as possible. While there is no shortage of hard work in the cellar and you must still pay careful attention to detail as great wines are really made in the vineyard. My job is to just guide it along and allow the individual vineyard to be expressed in every bottle.” Bob is an experienced winemaker whose meticulousness and patience yield wines that are authentic expressions of each vineyard site. Bob, his wife Heather and daughter Paige, make their home in the Russian River Valley.

Sutton graduated from the Culinary Institute of America in 1987 but his passion for cooking was established years before. Learning from parents who he deemed “great cooks,” Sutton took his familial knowledge and worked in various casual eateries in his hometown of Dallas. The flavorful road between those first jobs and his first 10 years as a chef was filled with learning various culinary techniques including French, California, and Southwest cuisine.

In 1993, Sutton was recruited to the internationally acclaimed boutique property, Napa Valley’s Auberge du Soleil. In 2000, he joined the Disneyland Resort. Since then, his contributions to the profession have been demonstrated in his ability to bring Napa Valley’s “earth to table” cuisine to Disneyland Resort guests. “We are extremely proud of Chef Sutton for this achievement. It is a tribute to his culinary excellence and his good character,” said Tony Bruno, vice president, Resort hotels and Downtown Disney. “His influence has been instrumental in shaping Napa Rose into an award-winning dining experience.”

The Antonin Carême Medal, which was awarded to Julia Child in 1974, was founded by The Chefs Association of the Pacific Coast, Inc. in 1969. Ferdinand Metz, former president of the Culinary Institute of America, and Bradley Ogden, who is celebrated for his New American Cuisine, also have received the award. “Chef Sutton has set a benchmark for excellence and creativity throughout his career,” said Master Sommelier Frederick L. Dame, who serves as a trustee for the Antonin Carême Awards. “Napa Rose is a perfect example of his dedication to the culinary arts and continued exploration in refining his craft. 10/25 Frank Pellegrino: Rao's, Ralph Brennan's Jazz Kitchen

What's Cookin' Today .

Actor And Co-Owner of Rao's In New York, Frank Pellegrino, Shares With Us The Long History and Mystic Of His Unique New York Restaurant

Rao's is renowned for its jukebox, its quirky decor, its unmatched hospitality and most of all, the spectacular Neapolitan cuisine. It's also notorious for being one of the most difficult restaurants in New York in which to get a reservation. Year-long waits for one of its ten tables are not uncommon. But what is it about this tiny, charming restaurant that makes it the most in-demand spot in the city night after night, year after year? For decades Rao's existed as a neighborhood restaurant. Its local customers would fill the tables with such regularity that eventually they were given standing reservations - bookings that persevere to this day.

The Rao's phenomenon exploded in 1977, when New York Times food critic Mimi Sheraton gave Rao's a gushing, half-page, three-star review, splashing the city's best-kept secret in front of millions of readers. Since Rao's NYC location only has ten tables, and only one seating per evening, the resulting demand would have been overwhelming even if the tables weren't already spoken for. That the tables were "owned" like a condominium translated to almost no empty seats in the house, night after night. Frank Pellegrino is an American actor and restaurateur. Born in East Harlem, Pellegrino has often acted in law and gangster-themed film and television productions. He was a member of an early sixties singing group called The Holidays. There is a rare recording of a song called "Never" that appears on FOUND IN THE BASEMENT VOL. 1. Notable roles of his include Johnny Dio in GoodFellas, assorted appearances on Law & Order, and FBI Chief Frank Cubitoso on The Sopranos. Pellegrino is a co-owner of the restaurant Rao's in New York City. Books written by Pellegrino include Rao's Cookbook and Rao's Recipes from the Neighborhood. He also produced the CD An Evening at Rao's, featuring music from Rao's jukebox.

10/20 Playboy Mansion Chef William Carter, Kentucky Fried Chicken!

What's Cookin' Today

Playboy Mansion's Executive Chef William Carter Is In Studio!

By March, William Bloxsom-Carter will have been executive chef and food and beverage director at Los Angeles’ Playboy Mansion for 25 years. The chef and his staff of 18 are responsible for not only feeding Playboy Enterprises Inc.’s Hugh Hefner and residents of his home, but also guests at a private hotel, a corporate fine dining room and corporate and charity events every year.

Manager of Public Relations Rick Maynard From KFC Talks With Us About The Fifth Anniversary of KFC's Famous Bowls and Tells Us How We Can Win Year’s Worth of KFC
!

KFC is celebrating the fifth anniversary of the introduction of our Famous Bowls with the addition of a sizzling sixth layer of bacon. The new Cheesy Bacon Bowls feature a generous serving of creamy mashed potatoes, layered with sweet kernel corn and loaded with bite-sized pieces of crispy Popcorn Chicken. The entire bowl is drizzled with signature home-style gravy and topped off with a shredded three-cheese blend – and now, a layer of crispy bacon.

The Kentucky Fried Chicken concept was pioneered by Colonel Harland Sanders (1890-1980), whose cooking career began at age six. Sanders held jobs ranging from streetcar conductor to insurance salesman, but his cooking skills were a constant throughout his life. In 1930, Sanders operated a service station in Corbin, Ky., and filled the stomachs of hungry travelers who stopped in to fill up their gas tanks. Sanders soon moved his restaurant across the street when he could no longer keep up with the demand from travelers who he had been feeding at his kitchen table. In 1935, the Kentucky Governor made Sanders an honorary Kentucky Colonel for his contributions to the state’s cuisine. Over the next decade, the Colonel perfected his secret blend of 11 herbs and spices and the basic cooking technique still used at KFC today. When Sanders was 65, a new interstate highway forced the closure of his restaurant and he was left with only his recipe for fried chicken and a $105 Social Security check. The Colonel hit the road and struck handshake deals with restaurant owners who agreed to sell his fried chicken. What began as a dream fueled by the Original Recipe, a no-quit attitude and a Social Security check grew into the world’s largest chicken restaurant chain. Until he passed away in 1980 at the age of 90, the Colonel still traveled 250,000 miles a year visiting KFC restaurants around the world.
