11/8 Ron Lynch, Stanley Licairac

Ron Lynch – President of The Tilted Kilt

The Tilted Kilt is a Celtic-themed sports pub featuring waitresses wearing sexy tartan outfits, known as Kilt Girls. Ron Lynch has been in the food business for many years. He heard of The Tilted Kilt, which started in the Rio Casino in Las Vegas. He bought the name “The Tilted Kilt” and started his first pub. Now it is one of the fastest growing sports bars in the United States with over 4,000 employees and 70 pubs.  Ron’s daughter is the Director of Social Media and his wife is the Director of Corporate Relations.  Ron’s father was his inspiration and his cheerleader. The year Ron started the business, his father passed away unexpectedly.  For his undercover mission, Lynch posed as Ryan Good, a failed sporting goods store owner from San Diego.

Stanley Licairac - Corporate Chef - "Havana Central"

There is no place Stanley Licairac would rather be than in the kitchen at Havana Central cooking home-style Cuban cuisine. “I have literally been doing this my entire life—I have no idea how to do anything else. The food at Havana Central is about the love that I actually put into making each and every dish.”

As Havana Central’s first employee dating back to April 2002, there’s nothing more heart-warming for Licairac than pleasing his customers. “The majority of people who come to our restaurant will look at the food descriptions on the menu and say, ‘Wow, this is really like my mother’s cooking. I’ll definitely come back here with my family!’ Or they’ll say, ‘This Arroz con Pollo is different, but the taste and the flavor is definitely something I’m familiar with and it brings me back to ... When I was a kid.’ And when they say things like this—which happens every week—that’s it for me!”

With three locations, each with its own unique personality and distinct clientele, Havana Central has been bringing real-Cuban cooking to New York since 2002. (The Union Square location will be celebrating its seventh anniversary this June 2009). The restaurants evoke Cuba’s golden era, when its namesake city was one of the world’s most tantalizing playgrounds. Walking into the swanky circa 1950’s Havana nightspot setting is to be transported to another place and time.

Brooklyn born and raised, the 38-year-old Licairac could barely see over the counter when he started learning the food ways of a Latin kitchen in his father’s deli. By the time he was 11, Licairac’s Dominican Republic-born father and Puerto Rican mother were living out the American Dream, having purchased the Midtown Manhattan deli in which the senior Licairac had once worked. “It was the first deli in Manhattan to offer such now familiar staples as picadillo and oxtail stew,” says Licairac.

By the time he was 19-years-old, Licairac began his own culinary career as silent partner, cook and waiter of Burritos Tin Tan on the Upper West Side. At Licairac’s insistence, the restaurant was distinguished from the profusion of Tex Mex operations by its dedication to authentic Mexican fare.

A few years later, Licairac persuaded his parents to come out of retirement to open a Mexican restaurant with him in Forrest Hills, Queens. At the very successful Burrito Heaven, Licairac continued his journeyman chef education, mastering a Caribbean-oriented Mexican repertoire, with the help of family recipes that taught him the flexibility of a simple foundation. Twenty-four months later the family sold the restaurant, and Licairac joined the Cabana Restaurants organization, where he took on front-of-house managerial responsibilities, as well as elevating the kitchen operations.

Toward the end of his three-and-a-half year tenure with Cabana, Licairac came to the attention of Jeremy Merrin, who had a vision for the creation of an authentic Cuban restaurant several cuts above the typical storefront variety. A novice to the restaurant industry, Merrin knew he needed a chef and a manager with experience and credibility in the Latin culinary community. He found both in Licairac.

Furthermore, Licairac was armed with a treasure trove of family recipes that would help define the character Merrin wanted to create for Havana Central, that of comforting home-style cooking. “It’s very family-oriented here. To this day I’ll call my mother and grandmother every day in Florida and we’ll test new dishes in our kitchens and check in with each other the following day. Also, we have 230 employees at Havana Central and most have a Latin American background — Cuban, Colombian, Puerto Rican, Dominican — and I ask them to taste everything. If 230 people give their seal of approval, I’m good!”

Aside from continuously reading anything he can get his hands on about Cuban cooking, Licairac finds the inspiration to work 12-16 hour days by feeding off the enthusiasm of everyone around him. “Everyone in our restaurants, from the cooks to the dishwashers, everyone has to be passionate about what they do. I will ask each of them every single day, ‘What would you like to see on the menu?’ And I will take bits and pieces of what they say and I’ll Cubanize it!”

According to Licairac, creating high-quality, authentic Cuban cuisine boils down to one main ingredient: Passion. “When it comes down to it, Cuban food is all about salt, pepper and garlic—it’s very basic. But real Cuban cooking is deeper than that. Take white rice, for example. You don’t just cook the rice and come back when it’s done. You have to watch over it, stir it, taste it, and nurture it. And that’s where the passion comes in. Latin American people are very warm and loving and that’s exactly the flair I put into all of my cooking.”

11/05 Thomas Craughwell, Peter Mondavi, Jr, Todd Carmicheal

THOMAS CRAUGHWELL - "THOMAS JEFFERSON'S CREME BRULEE"

WITH ELECTION DAY TOMORROW TOM CRAUGHWELL,  A WRITER, HISTORIAN AND CONSULTANT TO THE HISTORY CHANNEL TALKS ABOUT SOME FAVORITE DISHES OF FORMER PRESIDENTS.  In 1784, Thomas Jefferson struck a deal with one of his slaves, nineteen-year-old James Hemings. The founding father was traveling to Paris and wanted to bring James along “for a particular purpose”— to master the art of French cooking. In exchange for James’s cooperation, Jefferson would grant his freedom.  Thus began one of the strangest partnerships in United States history. As Hemings apprenticed under master French chefs, Jefferson studied the cultivation of French crops (especially grapes for winemaking) so the might be replicated in American agriculture. The two men returned home with such marvels as pasta, French fries, Champagne, macaroni and cheese, crème brûlée, and a host of other treats. This narrative history tells the story of their remarkable adventure—and even includes a few of their favorite recipes!

PETER MONDAVI, JR - CO-PROPRIETOR OF CHARLES KRUG WINERY

Now under the guidance of Mondavi , the Charles Krug Winery honors its roots while forging ahead to the future. From the Wild West to the twenty-first century, relatively crude beginnings gave way to the finest form of winemaking. Founded in 1861 by Charles Krug, the 27-year old Prussian immigrant came to America with little besides willpower and a willingness to work hard to build the cornerstone of the first winery in the Napa Valley. He became the major local winery figure of his era, greatly influencing Napa Valley's development as a world-renown wine producing region. His leadership was said to be inspirational and his ideas innovative. Charles Krug introduced the cider press for winemaking, the first of which is still on display at the winery. He carefully selected rootstocks, varietals and vineyard sites - a novel concept in late 19th century America.

 TODD CARMICHAEL - "DANGEROUS GROUNDS"

Todd Carmichael is an adventurer and coffee magnate, star of Travel Channel’s “Dangerous Grounds,” which premieres on November 5th at 10:00PM. In 2008, Carmichael – a real-life “Indiana Jones” – set the world-record for the fastest unsupported trek to the South Pole: thirty-nine days, seven hours and forty-nine minutes.  In addition to being an avid adventurer, he is also a successful businessman.  His premium coffee company, La Colombe Torrefaction, is based in Philadelphia and supplies top coffee roasts to the best restaurants and gourmet outlets in America.  Since Carmichael focuses on the rarest coffee beans, his exclusive blends are sought after by many of the world’s top chefs.  Growing up on a farm in Washington, Carmichael can relate to the farmers he buys from throughout the world.  Because of this, he bypasses the distributor that typically takes advantage of the farmers, and pays a fair price directly to the source.  Carmichael is also an active humanitarian.  His expedition to the South Pole raised a great deal of money for Orangutan Foundation International and he worked with the Clinton Global Initiative to raise considerable funds and awareness toward a coffee university in Haiti.  He also developed a coffee blend with Leonardo DiCaprio, Lyon, of which 100 percent of the profits go to the Leonardo DiCaprio Foundation, funding wildlife protection, forest preservation, clean-water projects, disaster relief and climate-change research around the globe.  In the one-hour premiere episode of “Dangerous Grounds,” Carmichael travels to a poverty-stricken Haiti still devastated by the aftermath of the 2010 earthquake.  The country, despairing and dangerous, is home to what was once one of the most savored coffees in the world.  After averting a brewing riot in the marketplace, Carmichael travels deep into the mountains where he navigates treacherous roads, dodges dangerous armed middlemen and finds an ancient bean hidden in the deepest area of the elevated terrain.

11/02 CHRISTOPER KNIGHT, EDEN GRINSHPAN, SANDRA LEE, STEVE EVANS

CHRISTOPHER KNIGHT - "HIGH TECH GIFTS"

Once and forever a Brady! Christopher Knight met life as a child actor, starring as "Peter Brady" in the TV classic hit show "The Brady Bunch" (1969). A reluctant icon, Christopher has focused his adult years on interests beyond the entertainment industry, particularly the corporate world of computers and high technology. Yet, due to the omnipresent and flourishing legacy of all things "Brady", Christopher's successful endeavors beyond show biz exist in peaceful subordination to his portrayal of "Peter" and his arguably estimable contribution to American pop culture. So, in an act of self-unification, Christopher is returning to his entertainment roots and is seriously exploring his options as an actor, host, spokesperson and erstwhile entertainment figure. Christopher's corporate existence in his adult years didn't constitute a full retirement from show business - he has starred or otherwise participated in the plethora of periodic Brady films, television movies, series, gatherings, discussions and retrospectives. Christopher also has exploited his status as an entertainment figure by availing himself to several projects as a host and spokesperson, including projects such as the American Counseling Association's 2002 & 2003 "Healthy Skin, Healthy Outlook" campaign, that went on to received the Gold Triangle Award both years Knight served as spokesperson. Christopher was also privileged to be the spokesperson for the National Consumer League's "AD/HD Campaign", speaking in Washington D.C. at the National Press Club on the sensitive subject of AD/HD, as he himself is an adult with ADD. Most recently, Christopher was brought on as the spokesman for a popular personal fitness product, Ab Lounge XL®. In 2003, he was asked to host a segment on the Travel Channel series' "TV Road Trip" (2003), starring the late John Ritter. When the series was optioned for a second cycle, Christopher was offered to "Host" the series. It was, in fact, this participation that lead to the rekindling of Christopher's interest in front and behind the camera. Christopher was soon signed up for the celebrity version of Discovery Health Channel's "Body Challenge", which debuted in the fall of 2004 and then to his unforgettable participation on VH1's "The Surreal Life" (2003) 4. The explosion of popularity and "new found fame" as a result of this #1 VH1 Hit that has also lead to his high-profile romance with "The Surreal Life" (2003) co-star and "America's Next Top Model" (2003) winner, Adrianne Curry, has placed Knight squarely back in the spotlight. Grateful at this unique second opportunity at an acting career, Christopher relishes the chance at experiencing celebrity now as a seasoned, experienced, "well-baked" adult. In 2005, his on-screen endeavors included special guest appearances on shows such as WB's "Blue Collar TV" (2004) and ABC's "Less Than Perfect" (2002). He has also starred as the lead in the independent film, Light Years Away (2008), co-starring Eric Roberts. Last, but certainly not least, Knight has been working on several projects with his now-girlfriend, model and TV personality Adrianne Curry, projects, that will surely keep his fans glued to the screen for a long time to come.
