Crescent Dragonwagon is the James Beard Award?winning author of seven cookbooks, including Dairy Hollow House Soup & Bread Cookbook, Passionate Vegetarian, and, most recently, The Cornbread Gospels. She is also a contributing editor to Relish magazine and has appeared on Good Morning America, Today and NPR's The Splendid Table. Rosti Tuscan Kitchen opened for business Thursday at the Courtyard at the Commons, replacing the space formerly occupied by Cosmos Grill. The Calabasas location offers the same menu as the other two Rostis in Santa Monica and Encino. Rosti is owned by entrepreneur Kevin Goldfein, who purchased the business in early 2008. Goldfein entered the restaurant business more than a decade ago waiting tables and rose the managing eatieres in New York. He also holds a graduate degree in hospitality management. In 2005, he opened the Loose Leaf restaurant in downtown Los Angeles and sold it the following year. Rosti offers assorted beers and a seasonal list of Italian and California Wines at our Encino and Calabasas location. Rosti is Proud to partner with Casa Torelli Wine Distributors to offer genuine and traditional Italian wines from 6 regions and 11 wineries in Italy. Located here in Los Angeles, and owned by an Italian wine making family, Casa Torelli is able to provide Rosti with wines that are true to their varietal and traditional in their winemaking heritage.
