David Kamen is a professor in Culinary Arts at The Culinary Institute of America (CIA). His professional kitchen experience includes positions at several New York City establishments, including banquet chef for the catering company Robins Wolfe Eventures, executive chef at the Fitzpatrick Manhattan Hotel, sous chef at the Novotel Hotel, and day chef at Poccino's in the Empire Hotel. In 2010, he won a gold medal and Best in Show at the Societe Culinaire Philanthropique Salon of Culinary Arts in New York.

Barbara Balik Shares Highlights From the 22nd Annual Culinary Evening with the California WineMasters at Warner Bros. Studios!

On May 14th, 2011, the Cystic Fibrosis Foundation hosted “ A Culinary Evening with the California Winemasters” on the “Midwest Street” backlot at Warner Bros. Studios in Burbank, California. 1,400 guests from all across the country attended this always sold-out event. Over 45 celebrity chefs from around the world were paired with 70 of California’s most talented winemakers to present a tasting and hors d’oeuvres extravaganza.

The 22nd annual “Winemasters” benefits the Cystic Fibrosis Foundation. Last May’s event net over $1,650,000 for the Foundation’s vital research and care centers and over 21 million dollars ahs been raised since the event began.

This year, the “Winemasters” boasted one of the most extravagant auctions in history with over 900 live and silent auction items from fantasy trips to exclusive collector wines. The live auction this year included a four-day stay for ten couples in a hilltop villa about Sienna, Italy; a two-week wine tasting holiday to Argentina with visits to every major winery and a side trip to Patagonia; a luxury cruise down the Amazon River; a north and south adventure for two couples created by Honorary Co-chairs Chef Craig Strong of Studio, Montage Laguna Beach and the Schwieger Family and a one-of-a-kind glass sculpture and original drawing from artist Dale Chihuly.

Live auction wine lots included a unique Imperial of 2006 Chateau Haut Brion, a 120-bottle collection from the Mount Veeder Appellation and a “Mountain of Magnums” as part of a Spring Mountain “Stay and Play” getaway from the Spring Mountain District Association.

We're Talking with Masterchef Judge Chef Graham Elliot!

Chef Graham Elliot is the culinary mastermind behind Chicago’s first “bistronomic” restaurant, Graham Elliot, which tempers four-star cuisine with humor and accessibility. In a very short time, the 33-year-old chef has accrued accolades, including Best New Chef in 2004 from Food & Wine magazine and three James Beard Nominations.


At age 27, Elliot became the youngest four-star chef in America. In May 2008, he opened the aptly named Graham Elliot, a restaurant that would not only bear his name, but become an extension of his passionate personality embodying his core principles of humility, courage, vision, respect and focus. Since opening its doors, Graham Elliot has beguiled the city of Chicago garnering two stars from the Chicago Tribune, two-and-a-half stars from the Chicago Sun-Times and one star in the 2011 MICHELIN Guide.

We're Heading Over to VML Winery with Virginia Marie Lambrix!

While on vacation in South Africa, Virginia Lambrix tasted her first “serious wine.” At that time, she had received her B.A in Psychology from Colgate University, NY and was working for the Max Planck Institute for Chemical Ecology. Captured always by a love of nature and the out of doors, she determined it was time to learn about the art of the vineyard - viticulture. Within a year, Virginia was studying horticulture and agronomy in the master’s program at the University of California, Davis, with an emphasis on viticulture and enology. Upon graduation from UC Davis, she worked at the Hendry Ranch in Napa, in Chile for Concha y Toro.

In 2004, Virginia visited a Biodynamic farm in Chile, and again, was captured. It was immediately clear to her that its principals of respecting nature and nurturing ecology within the vineyard made sense in both a scientific framework and on an intuitive level. She embraced the philosophy and made a point to study and implement its principals at every opportunity. With this knowledge she returned to work in California for Lynmar and De Loach Vineyards, both in the Russian River Valley. During her 3 years at De Loach Vineyards, Virginia worked closely with her growers moving their vineyards to more sustainable farming methodologies and in the process, improving quality and moderating farming costs. Her mentor at De Loach, Greg La Follette, taught her to understand both vineyards and winemaking at an intuitive level.

Working side by side with winemakers, Hugh Chappelle at Lynmar Estate and Greg La Follette, Virginia couldn’t help but to follow their winemaking with interest and began making wine. In 2008 she began making wine for Truett Hurst Winery. Bringing her former background in the Russian River Valley to the attention of the Truett Hurst team she added Russian River Valley wines to the winery’s portfolio. Today she oversees winemaking for the brands of H.D.D. LLC consisting of Truett Hurst wines in Dry Creek Valley, VML Winery in Russian River Valley, as well as the Bradford Mountain and Healdsburg Ranches brands.

Virginia is a strong advocate for alternative agriculture. She is currently on the Demeter Board for education on biodynamic farming with the goal of developing educational resources for farmers that are pursuing biodynamic farming.
