In 2004, John Gonsalves founded Homes for Our Troops (HFOT), an organization that builds specially-adapted homes for severely injured military veterans. The New England construction supervisor was moved by our veterans’ commitment and found there was very little being done to specifically cater to the needs of those coming home with life-changing injuries or disabilities. Gonsalves saw that he could help, and the organization has since built nearly 50 homes for disabled veterans, catering to their special needs, from Massachusetts to California. This spring, in time for Memorial Day, HFOT is launching Kids for Our Troops (KFOT) to help parents, children, teachers, students, club leaders, and civic organizations get involved in the efforts to provide these homes for disabled veterans and their families. Wildly successful young chef and restaurateur Michael Psilakis – whose Anthos is one of only two Greek restaurants in the world with a Michelin star – refined his talent not in culinary school but in the kitchen beside his Greek mother during his childhood on Long Island. After earning a business degree, he found himself drawn back to the food world, where he worked his way up from waiter to owner of the Long Island restaurant Ecco. His subsequent enterprise with celebrated restaurateur Donatella Arpaia, called Dona, was one of Esquire's Best New Restaurants in 2006, but the place closed when the building housing it was sold to a developer.  Psilakis and Arpaia have now taken some of the concepts behind Dona, which featured Italian cuisine with Greek inflections, and recreated them as Mia Dona, a new restaurant on the Upper East Side with a genial ambiance, sophisticated but unpretentious menu, and reasonable prices. Psilakis spoke with us recently about his journey from TGI Fridays waiter to rock star chef, his forthcoming book, and his plans to bring his haute Greek cuisine full circle to Greece. . James Villas was the food and wine editor of Town & Country magazine for 27 years, and his work has appeared in Food & Wine, Saveur, Gourmet, Bon Appétit, The New York Times, and many other publications. He has written 15 cookbooks and books on food, including two that were nominated for James Beard Awards and featured in Food & Wine's annual "Best of the Best." He has won two James Beard Journalism Awards, most recently for an article in Saveur, and was named Bon Appétit's Food Writer of the Year for 2003. He is also the author of The Glory of Southern Cooking and The Bacon Cookbook, both from Wiley.  If pig is indeed king, then there is trouble at the castle, for Villas (Dancing in the Lowcountry) has stormed the gates and had at him, leaving no sweetbread, shoulder, or chop untasted. So let the commoners rejoice: here are 300 recipes from Southern hog heaven that are juicy, flirtatious, and, at times, scary. Brave hearts will want to immediately dive into the Variety and Special Meats chapter for some deviled pork liver; hog's head stew; and brains and eggs. The upper crust might prefer a pork pie. Choices include spicy Tennessee sausage; Pork, Apple and Raisin; or Bacon and Corn. A section on barbecue and ribs includes both North and South Carolina styles of BBQ and half a dozen sparerib options. And where lesser authors might stray off-topic when moving to side dishes, Villas, with 13 cookbooks and two James Beard awards under his belt, knows better. All 39 vegetable and rice dishes are chock full of oink, from the mushy turnips with bacon and pork to the slab bacon hoppin' John. Similarly, there are 20 breads that are decidedly not fat-free. That other Southern king, Elvis, would surely have appreciated the bacon-peanut butter muffins, perhaps chased down with a lard hoecake or some bacon-grease hush puppies.

Maureen Maher - CBS'  48 HOURS MYSTERY  “One Of Their Own”
Maureen Maher has contributed to 48 Hours since 2003. Previously, she had been a correspondent for CBS News since 1999 and was based in Dallas. The family of Sherri Rae Rasmussen, who was 29 when she was murdered in 1986, is calling for a probe into the Los Angeles Police Department’s original investigation, which left the case unsolved for over two decades. Rasmussen, the director of critical care nursing at Glendale Adventist Medical Center, was discovered in her Van Nuys condominium badly beaten and shot to death at point-blank range. In an exclusive interview with 48 HOURS MYSTERY, Sherri’s father, Nels, details how he tried repeatedly to get detectives to investigate his son-in-law’s ex-girlfriend, Stephanie Lazarus, who friends and family say Sherri complained was stalking her. “To me it would border on harassment,” says Nels, who accuses authorities of ignoring their pleas about Lazarus. “The first weeks, the first five days I mentioned it so many times that he kind of lost his cool with me, saying that there was no need to go there,” says Nels about the lead detective. And the family’s attorney, John Taylor, calls the 1986 investigation, “sloppy, negligent, inept and incompetent.”  At the time, Los Angeles was in the midst of a dramatic spike in crime and authorities quickly latched onto the theory that this was a case of a robbery gone horribly wrong, yet no suspects were ever arrested. The case remained unsolved until authorities quietly reopened the investigation and uncovered evidence that would debunk the original burglary theory.  Los Angeles Times police reporters Andrew Blankstein and Joel Rubin broke the story last year that a well respected LA detective had been arrested for the 23-year-old murder – that detective was Stephanie Lazarus. Hank Aaron is one of the greatest baseball players of all time. He broke Babe Ruth’s legendary lifetime mark of 714 home runs, eventually setting a record of 755 homers before he retired. But after retirement, he began to experience knee pain. Over the years, Hank’s knee pain increased to the point that he couldn’t do many of his favorite activities and even had trouble walking short distances. Hank was in top physical condition during his career in professional baseball, experiencing very few injuries. He became frustrated when the simplest physical activities, such as driving a car, became uncomfortable. He was determined to find something to help relieve his pain without resorting to surgery.  Henry Louis "Hank" Aaron (born February 5, 1934 in Mobile, Alabama) is a retired American baseball player whose Major League Baseball (MLB) career spanned the years 1954 through 1976. Aaron is widely considered one of the greatest baseball players of all time. In 1999, editors at The Sporting News ranked Hank Aaron fifth on their list of "Greatest Baseball Players."  After playing with the Indianapolis Clowns of the Negro American League and in the minor leagues, Aaron started his major league career in 1954. Catherine soon ventured into television, as well, landing roles as reporter on Extra!, Dick Clark’s Rocking New Year’s Eve, and a run as co-host on MTV’s Loveline with Dr. Drew and Adam Corrola.  Fortunately, Catherine avoided the pitfalls many young models find themselves in, such as drug abuse and eating disorders, attributing her success to a strong sense of family values, and an understanding about what she needed to give her body in order for it to function properly. Her parents supported her modeling career and grounded her with guidance. Catherine’s dad encouraged her to save her money so that she could one day afford to focus on her true passion – cooking and food.  That time came in 2002, soon after the devastating attacks of 9/11. Impacted by the tragedy, Catherine decided to finally follow her dreams and enroll at the Institute for Culinary Education in Manhattan.

On a Friday night in 1964, Dominic Bellissimo was tending bar at the now famous Anchor Bar Restaurant in Buffalo, NY. Late that evening, a group of Dominic's friends arrived at the bar with ravenous appetites. Dominic asked his mother, Teressa, to prepare something for his friends to eat.  They looked like chicken wings, a part of the chicken that usually went into the stock pot for soup. Teressa had deep fried the wings and flavored them with a secret sauce. The wings were an instant hit and it didn't take long for people to flock to the bar to experience this new taste sensation. From that evening on, Buffalo Wings became a regular part of the menu at the Anchor Bar. The phenomenon created in 1964 by Teressa Bellissimo has spread across the globe. Although many have tried to duplicate Buffalo Wings, the closely guarded secret recipe is what makes Frank & Teressa's the proclaimed "Best Wings in the World."  President Barrack Obama recently visited Buffalo on business and when to the wrong wings location - Ivano tells us what happened.

Internationally renowned chef Curtis Stone will host NBC's “2010 Miss USA Pageant” live from Planet Hollywood Resort & Casino in Las Vegas on Sunday, May 16 (7-9 p.m. ET), along with Natalie Morales, NBC's “Today” show co-host and correspondent.  Stone is a master chef, best-selling author, TV host, and entrepreneur. He can currently be seen competing alongside the likes of Sharon Osbourne and Cyndi Lauper on NBC's hit show “The Celebrity Apprentice” and on NBC's “The Biggest Loser” as he teaches the contestants on the ranch how to make good nutritional choices and prepare healthy meals. will introduce your viewers to some of the most adorable and amazing animals you've ever seen. Most people know these massive horses because they have been an American Icon for more than 75 years. Now, for the first time, the facility is being opened to the public, so guests can see and interact with more than 100 Clydesdales ranging from foals to stallions.  Some things are just so unique you want to share them with the world. One of those places is Warm Springs Ranch in Missouri where each year around 40 baby Clydesdales are born.
