What's Cookin' Hour TWO:

We're Visiting Contra Costa County Where Neil Cohn Gives Us A Tour of Hannah Nicole Vineyards!

Neil and Glenda Cohn started with 10 acres of land and countless hours spent working in the garage on weekends. From there, our passion quickly grew into a mission of creating boutique, handcrafted wines for more than just family and friends.

Purchasing 80 acres of prime land on Balfour Road in Brentwood, they watched the dream of Hannah Nicole Vineyards unfold. At first, they planted Bordeaux varietals. Then they added Rhone varietals. From these varietals, we now produce more than 15 wines. Their flagship Viognier and Meritage demonstrate the sophistication and distinction that are uniquely characteristic of wines from Contra Costa County.

As their vineyards continue to expand, their wine will soon enjoy the mark of being 100 percent estate grown. Their vineyards currently include 41 acres of red Bordeaux varietals (Cabernet Sauvignon, Cabernet Franc, Petit Verdot, Merlot and Malbec), six acres of white Bordeaux varietals (Sauvignon Blanc), 15 acres of red Rhone varietals (Syrah, Petite Sirah, Mouvedre and Grenache), six acres of white Rhone varietals (Viognier) and five acres of Italian varietals (Zinfandel). Their red vintages are pruned and thinned to produce between three and five tons of fruit per acre, enhancing the flavor and intensity of their wines. Their white varietals, which are produced from their Estate grown Sauvignon Blanc and Viognier, are pruned to produce four to six tons of fruit per acre. They also utilize multiple clones of certain varietals to provide more depth of flavor and characteristics that are unique to each.

Since farming is all about timing, they make every effort to stay one step ahead of Mother Nature. Using technological innovations such as water sensors helps them monitor the moisture content of the soil – a requirement that is necessary when practicing Regulated Deficit Irrigation (RDI). A key process that allows the grapes to be kept in a constant state of moderate water stress, RDI enhances their varietal flavors.

Chef Joseph Gillard Gives Us A Tour of the Napa Valley Grille in Westwood Village!

Wine country meets Hollywood at Napa Valley Grille in Westwood Village. Local, seasonal ingredients and a vast array of wines are served in a rustic, yet refined setting suitable for a pre-
theater dinner for two, or a business lunch with top celebrity clients.

The wine country warmth in the main dining room is illuminated by the earth-toned hues, wooden harvest table, farm-fresh floral displays, wine artifact pieces, rustic lighting fixtures and an exhibition kitchen.

Before the Food Network and celebrity chefs, Joseph Gillard found inspiration from the earlier days of cooking television. At the age of five, he was mesmerized by Julia Child, declaring to his mother that he would one day become a chef. The budding culinary enthusiast was only ten when he read his first cookbook, Child’s Mastering the Art of French Cooking, from cover to cover.

Gillard was raised in Freemont, Mich. on a 40-acre homestead where his mother, a single parent, raised goats, chickens, rabbits, pigs, pheasants and cows. The family’s large vegetable garden and market stand where they sold their goods provided sustenance and income for the family, making a lasting impression on Gillard as to the integrity and beauty of local and seasonal food products.

His transition into a serious culinary career came in 1987 when he joined the kitchen staff of the Amway Grand Plaza Hotel in Grand Rapids, Mich. His next job was Executive Sous Chef at Egypt Valley Country Club, also in Grand Rapids, coordinating daily dining services for up to 1000 guests. Intrigued by the city’s culinary culture, Gillard moved to Los Angeles in 1993 and secured a job at Joachim Splichal’s Pinot Bistro in Studio City.

Over the next eight years, Gillard served as an integral part of the Patina Group kitchen. During his tenure with the Patina Group, Gillard played a significant role among the participating chefs for several Emmy and Grammy dinner galas.

In 2001, Gillard moved to Boca Raton to open his own catering company, but California beckoned, and thus he returned to Los Angeles in 2002 to become Executive Chef at Mirabelle on the Sunset Strip.

Gillard joined Napa Valley Grille in 2007 as Executive Chef. With his upbringing on the farm and strong relationships with California farmers, his culinary signature is a perfect fit for the wine country cuisine of Napa Valley Grille. Gillard, a Sherman Oaks resident, regularly contributes his time to several Los Angeles fundraisers, including Meals on Wheels, the Los Angeles Opera Wine Auction and the Elizabeth Glaser Pediatric AIDS Foundation.

2/21 Primator Beer, Grilled Cheese Truck & Benovia Winery

What's Cookin' Today Hour ONE:

Christopher Uhde Stops By To Talk About Primator Beer!

The rights for beer brewing were given to the town of Náchod many centuries ago. The times when beer was brewed in burgess houses were finished by the decision to built the town's brewery. This decision was adopted at meeting of the town representatives on June 30th, 1871. The construction of the brewery was started immediately the following year and just two years later the citizens of Náchod tasted the beer from the first production. The popularity of beer of Náchod was continuously growing, therefore in the years 1925 till 1930 the brewery was enlarged. A new brewhouse was built and 7 year later the first beer brewed there was bottled.

Recently an extensive reconstruction was made in the brewery and now with its technology it ranks among the most up-to-date breweries in the country. The brewhouse has been reconstructed, new lager storage cellars and storage halls have been built. A new top filling line for the bottled beer and cask beer has been installed in the new production hall. The recent equipment enables to produce beer using classic technology proved by centuries, so characteristic for Czech beer. Therefore beer meets high international quality requirements and also keeps its characteristic taste.

Primátor beer is produced from the Czech first-quality raw materials using the technology of bottom fermentation; the malt is from South Moravia, the hops come from Žatec region and top-quality water is from natural preserve of Adršpach -Teplice Rocks - Protected Landscape Area Broumovsko. The beer is of full and relish taste without any secondary taste, it leaves a feeling of pleasant on tongue, slowly disappearing bitterness without any rough and astringent touch. An advantage of Primátor is its long durability and long-lasting visual quality and unchanging taste.

PRIMÁTOR brand keeps its top quality continuously for a long time. Not only a number of medals and prizes gained on various prestigious fairs, exhibitions and competitions (in the Czech Republic and also abroad), but also the fact that the brewery exports a part of its production abroad to the customers in Great Britain, Hong Kong, Germany, Russia, Israel, Switzerland, Sweden and Italy is an evidence of a very good tradition of Náchod´s brewery.

We're Tasting the Cheesier Side of Los Angeles with Michele Grant From The Grilled Cheese Truck!

Inspiration happens when you least expect it! What started as a fun, weekend activity to enter the Cheesy Mac and Rib Melt into LA's 7th Annual Grilled Cheese Invitational quickly became the idea behind The Grilled Cheese Truck. After seeing the masses of grilled cheese fanatics gathered to pay homage to their favorite childhood (and adult!) comfort food, Dave Danhi & Michele Grant realized that this world needed more grilled cheese sandwiches brought to the streets. Not just the classic bread, butter and cheese, but amazing creations that are constructed with the best ingredients, local produce and made with nothing but love.

What's Cookin' Today Hour TWO:

Let's Take a Ride Down The Russian River Valley to Beautiful Benovia Winery with Winemaker Mike Sullivan!

Ben Dewane and Novian Anderson never met, yet they raised their children with similar old-fashioned values. Hard work brings its own rewards, they would say. Be the best at what you do. Surround yourself with good people, and let them get to work. And never, ever produce anything that wouldn't make you proud. With such similar family backgrounds, it's no wonder Joe Anderson and Mary Dewane would eventually find each other and marry. Together, they began a journey that led them to found a winery that would make them, and their fathers, proud--proud enough that their label pays homage to the two men, Benovia. Their journey also inspired them to assemble the best possible team of respected winemaking veterans. They recruited Bob Mosby as general manager and found the perfect partner in Mike Sullivan, one of northern California's top winemakers, and someone who shares their passions. With Mike as co-owner and responsible for the wine making, they recruited Daniel Roberts as winegrower and viticulturalist, and Tucker Catlin as vineyard development director. Then they brought on Tina Alves as operations manager, Chris Kangas as vineyards manager, and Nick Finarelli as Enologist to bring even more depth to the winery's operations. They are good people, and together they make an even better team: a team of accomplished professionals with more than 150 years of collective experience producing some of California's best wines. "At Benovia, our team is an extension of an extraordinary family," says Joe, "a family that eats, drinks, and breathes a lifelong passion for wine." That passion led to the purchase of the renowned Cohn Vineyard atop a mountain near Healdsburg, where the couple lives, and led to a new winery in the heart of the Russian River Valley. The journey will continue with an exciting new Pinot Noir vineyard near Freestone, and the Martaella ranch (named after Joe and Mary's mothers), surrounding the winery itself.
Joe and Mary have invested in all the right things to make Benovia flourish-vineyards with unique terroir and a well equipped winery. But their most important investment is people.

We're Visiting Beautiful Sonoma County Where David Bice Tells Us What's New at Redwood Hill Farm!

Located among the picturesque redwoods of western Sonoma County, California, sixty miles north of San Francisco, Redwood Hill Farm is a different kind of dairy. A small family farm, they have been producing delicious, award-winning goat milk dairy products since 1968 when owner, Jennifer Lynn Bice’s parents first decided to build their grade A goat dairy in Sonoma County providing fresh goat milk to the public.

In 1978, Jennifer assumed ownership of the farm with her late husband Steven Schack, expanding the business to produce a greater variety of goat milk products, and diversifying the dairy goat breeding program. Promoting the benefits of goat milk products and developing a genetics program of excellence has been a top priority and Jennifer’s work has positioned Redwood Hill Farm at the forefront of the goat dairy industry.

Today the herd is exhibited at major shows, holding National Champions in four of the five breeds. Redwood Hill Farm furnishes stock to dairy goat breeders across North and South America. Quality and sustainability have been the guiding principles as Redwood Hill Farm has grown over the years. Mike & Paul Take a Trip to Luscious Malibu Family Wines with Tami Sempler & Crew!

The rich, fascinating history of Saddlerock Ranch began more than three centuries ago when the vast expanse of land surrounding the Santa Monica Mountains was part of the original Spanish Land Grant. The area of more than 200,000 acres was a perfect site for sheep and cattle, and up until the 1930's, was known as El Malibu.

Local caves are filled with ancient pictographs painted by the Chumash Indians, dating back to the Portola Expedition of 1769. The beautiful pictographs of this culture have become very rare due to erosion and weathering, but some of the most well preserved examples remain on the ranch and have been studied by archeologists and photographed for books on the subject.

Today, the Semler Family owns Saddlerock Ranch. Ronnie and Lisa Semler, along with their nine children, have lived on the ranch for over twenty-seven years.

We're Visiting the Beautiful D.R. Stephens Estate in Napa Where Tasting Manager Wendy Day Tells Us All About Their Unique Cabernet Sauvignons & Chardonnays!

On graduating from college at University of Southern California, Don Stephens moved from Sacramento where he had grown up to San Francisco to attend Hastings Law School.

To pay for his education he and some partners started a restaurant on Union Street – a steak house named “The Cooperage.” The attraction of good red wine, and particularly Cabernet Sauvignon, combined with a steak, gave him the long-term goal of becoming a vintner and making great wines.

The desire stayed with him through his business career as a lawyer; Founder, Chairman of the Board and Chief Executive Officer of the Bank of San Francisco and Managing Partner of D.R. Stephens & Company – a firm he founded in 1973 and still manages today in the real estate and private equity investment business.

Trish, an interior designer and gourmet cook, prides herself on her entertaining, a key element of which, in San Francisco, is wine selection. When she and Don met in 1994 one of their joint interests was to some day create a world-class wine.

In 1996 Don and Trish found Oz II, their 35-acre property on Howell Mountain Road in the Saint Helena area of the Napa Valley, and an opportunity became available to attain their dream. Trish designed and built their French-European home on a four-acre plateau above the vineyards and indigenous olive trees. She is currently planning the addition of a wine cave with a dining hall and wine library, which will hold the Estate’s legacy wines and provide a venue for large scale entertaining.

Don and Trish planted the nine-acre Moose Valley Vineyard in 1996 and had their first release of their 1999 D.R. Stephens Estate Moose Valley Cabernet Sauvignon in 2002.

The wine was extremely well received in the food and restaurant world and was immediately added to the wine lists of some of the best restaurants in many of the major cities.

Wendy Day: A life long Californian, Wendy arrived in the Napa Valley in 2005 after having lived for many years on the North Coast. While there, she attended Humboldt State University, earned a Bachelor of Arts degree in Speech Communications and a Master of Arts degree in the Teaching of Writing.

At the beginning of her career in education, she took a U-turn and purchased the small restaurant where she had worked throughout college. Folie Douce Restaurant was originally the creation of Les Behrens and Lisa Drinkward (Behrens Family Winery; Drinkward-Peschon) in Arcata, California. In 1998, Wendy took over ownership of the business from the couple and began another avenue of study: wine and food.

Seven years later she sold the business and moved to the Napa Valley on a quest to learn about the production of wine. She accepted a position as a harvest intern at a small Oakville winery where she gleaned as much information as possible about fermentation, vines, and soils. A short series of steps brought her full circle, and she is now back to doing what comes naturally --sharing her enthusiasm for beautiful wine and food.

When she is away from D.R. Stephens Estate, Wendy is usually out exploring local trails or tending her garden with her border collies, Sofia and Faye.

David Munksgard, Iron Horse Vineyards’ Winemaker, Tells Us What To Drink On Valentine's Day!

The name Iron Horse came from a train that stopped at Ross Station at the turn of the 20th Century. The logo, the rampant horse on a weathervane, came from an actual weathervane that was unearthed when they were leveling the ground to build the winery.

In the arena of sparkling wines, Iron Horse stands at the top. The wines have been served at the White House for the past five consecutive presidential administrations, beginning with the historic Reagan-Gorbachev Summit Meetings, which lead to the end of the Cold War.

The winery is proud to produce a limited number of special cuvees for Charlie Palmer, Michael Mina, Bradley Ogden, Commander's Palace, and Disney.

Iron Horse is truly a family affair. Audrey and Barry's daughter Joy Sterlings the CEO and lives at the foot of the vineyard. The Sterlings' son Laurence, his wife Terry and their children moved to Iron Horse in 1990 and built their home on the far southwest corner of the property. Laurence is Director of Operations. Audrey and Barry are retired, but still reside at the heart of the estate in the original Victorian built in 1876. Forrest Tancer retired in 2005.

About the Winemaker: David Munksgard is Iron Horse Vineyards’ winemaker. He joined Iron Horse in February 1996, bringing with him 16 years of experience in producing premium sparkling and still wine in California's Russian River Valley and New York's Finger Lakes region.

Now in 2010, after 14 years serving as winemaker for Iron Horse, David still sees his position here as evolving much as he sees the wines. “Our goal here is to make better wines each year. That really keeps you on your toes, forces you to re-think everything, nothing is sacred, nothing is cast in stone.” Believing that great wines start with great grapes, David has further involved himself with the details of the vineyard. “Here I am 30 years into my career when most would be contemplating retirement and I’m so excited about our future wines I can hardly be contained.”

David is a 1980 graduate of the Enology/Viticulture program at California State University, Fresno. David and Page, his wife of 38 years, have two sons: Vincent, a teacher who is married and has two sons, and Sterling, who is pursuing a career in law enforcement. Page is registrar at the local Junior College Public Safety Training Center.

Of his winemaker position at Iron Horse, "I'm doing everything I've always wanted to do. I'm working with estate-grown grapes; I'm making still and sparkling wines; I'm working for and with some very fine people all of whom are driven by one single goal--to make wonderful wines that we can all be proud of.

Summing up his feelings about winemaking, David concludes with: “For those of us who are fortunate enough to have found ourselves in winemaking, it is not that we should be winemakers, we simply MUST BE winemakers. Nothing else will satisfy that need to craft; to imprint onto and into our wines what we feel and see when we walk the vineyard and dream of what it might be.”

Nate Corddry Talks About His Role as "Adam Branch" on NBC's "Harry's Law!"

Emmy Award-winning writer/producer David E. Kelley ("Boston Legal," "The Practice," "Ally McBeal") weaves his rich storytelling into a new legal dramedy starring Academy Award winner Kathy Bates in the title role - about how people can embrace the unexpected and other curveballs that life can throw at them.

Harriet "Harry" Korn (Kathy Bates, "Misery," "About Schmidt") doesn't believe things happen for a reason, but she discovers that they sometimes do. A curmudgeonly ex-patent lawyer, Harry is abruptly fired from her blue chip law firm, forcing her to search for a fresh start. She finds it when her world unexpectedly collides, literally, with Malcolm Davies (Aml Ameen, "Kidulthood"), a kind-hearted college student who desperately needs Harry's help with his pending court case, and he subsequently goes to work for her.

Harry soon finds her balance as well as new offices in an abandoned shoe store just as legal hotshot Adam Branch (Nate Corddry, "The United States of Tara," "Studio 60 on the Sunset Strip") accidentally hits her while driving. Inspired by Harry's no-nonsense understanding of the law, Adam decides to take leave of his shiny corporate firm to go and work with her. Harry, Adam and Malcolm - unlikely but kindred spirits - along with the help of Harry's shoe-savant assistant, Jenna (Brittany Snow, "Hairspray," "American Dreams"), are now ready for whatever walks in through the doors of their unique establishment - Harriet's Law and Fine Shoes.

"Harry's Law" is produced by Bonanza Productions Inc. in association with David E. Kelley Productions and Warner Bros. Television. David E. Kelley ("Boston Legal," "The Practice") and Bill D'Elia ("Boston Legal," "The Practice") serve as executive producers. D'Elia also serves as director.

Nate Corddry began his career on “The Daily Show with John Stewart” and was then cast as a series regular on “Studio 60 on the Sunset Strip,” created and produced by Aaron Sorkin. Corddry went on to work in such feature films as “ The Invention of Lying” with Ricky Gervais and “The Ugly Truth” with Katherine Heigl and Gerard Butler. Corddry recently appeared in a lead role in Warner Bros. Feature film, “Yogi Bear,” and will soon be heard as the voice of a lead character in the animated “Tron” series.

On the big screen, Corddry will also star this winter in a lead role opposite Julianne Moore in the feature “Shelter.” Most recently, Corddry’s credits include the series lead in Larry Charles’ “Our Show,” HBO’s miniseries “The Pacific” (produced by Steven Spielberg and Tom Hanks), a starring role opposite Sarah Michelle Gellar in the HBO pilot “The Wonderful Malady’s,” a 10-episode arc on the Spielberg-produced Showtime drama “The United States of Tara,” and a guest cameo on the Emmy Award-winning NBC series “30 Rock.”
