01/31 SEAN WITTENBERG, SAFE CATCH, FDA & EPA’S NEW SEAFOOD GUIDELINES, JIM MORELLI, PROTECT DON’T INFECT

SEAN WITTENBERG - CO-FOUNDER OF SAFE CATCH -CLEARS UP THE CONFUSION OF THE FDA & EPA’S NEW SEAFOOD GUIDELINES

The FDA and EPA recently released a new guide to fish consumption. Unfortunately, it’s not helping people, it’s only scaring them away from eating fish altogether. The FDA has created a list of “Best Choices”, “Good Choices”, and “Choices to Avoid”. Among the choices to avoid is bigeye tuna, which is confusing people, thinking not to eat any tuna all together.

Sean Wittenberg, the co-founder of Safe Catch, is an expert in the seafood industry who can help clear up the confusion of the FDA and EPA’s new seafood guidelines and educate consumers about the fish they can eat.

Safe Catch Purpose
Here at Safe Catch, we believe that purity matters. Purity in our oceans, lakes, and rivers, and purity in our food supply, the way nature designed it. We believe that pure foods should be attainable to everybody, from all walks of life. Our mission is to provide consumers with pure and delicious seafood, while also protecting purity in our oceans, lakes, and rivers.

YOU’VE GOT THE FLU: NOW WHAT?
“CDC: Levels of flu-like illness are above national baseline this season”

Flu season is here and is extremely contagious.  An estimated 20% of Americans suffer from the flu and flu-like symptoms, with kids being the most susceptible group of all, but adults still at risk to get sick this time of year.   It can spread easily to others, especially in places like day-care centers, schools, cruise ships and nursing homes. If all of this sounds familiar to those of you who laid viciously low over the holidays. It’s because the arrival of cold weather usually coincides with an increase in one of winter's most dreaded horrors: noroviruses and respiratory viruses.

Experts agree that the flu rate this year is about three times higher than last year, and it hasn't reached its peak yet. Even among the vaccinated, incidence of flu-like symptoms is at an all time high. Registered Pharmacist and News Correspondent Jim Morelli has easy tips on how to prevent the flu and reduce the length of the flu in case you catch it.

A former anchor and health correspondent for CNN and CNN Headline News, Jim has worked as a registered pharmacist and poison control specialist. He has authored two books on health including the more recent, Poison; How to Handle the Hazardous Substances in Your Home.

1/24 LAURA BOORAS, RIVER BENCH, WOPN, SUNNY ANDERSON, SNACK STADIUMS, STEVE EVANS, THE MOVIE GUY, THE ACADEMY AWARD NOMINATIONS

LAURA BOORAS - GM, RIVERBENCH AND BOARD MEMBER OF THE UPCOMING WORLD OF PINOT NOIR

Riverbench Vineyard was established in 1973, when the first Chardonnay and Pinot Noir grapes were planted on the bank of the Sisquoc River, known as the Santa Maria Bench. For decades since then, some of the most renowned wineries have purchased our fruit for their wines. In 2004, we began producing our own wines in limited quantities, with many available exclusively through our tasting rooms in Santa Maria and Santa Barbara, California.

Riverbench VINEYARD
Situated on the southeastern edge of the Santa Maria Valley, the northernmost AVA in Santa Barbara County, the vineyard currently consists of 107 acres of Pinot Noir and 77 acres of Chardonnay. We continually evaluate the vines as they age, replanting as necessary.  In 2008, we committed ourselves to our premium sparkling wine program. We continue to work hard making wines that are inspired by Champagne in France. In 2015, we added the third great grape varietal famous in that area, Pinot Meunier, to our vineyard. We anticipate incorporating these grapes into our sparkling wine blends beginning in 2017.

Santa Maria ValleyAVA
The Santa Maria Valley is an appellation known for its diverse microclimates and ideal conditions for growing Burgundian varieties. This distinct wine region is characterized by the valleys in our Pacific coastline which run east to west instead of the more common north to south. Such a geographic peculiarity channels the cool ocean breezes inward, resulting in a mild and moderate climate where Pinot Noir and Chardonnay thrive.

IT'S NATIONAL CHEESE LOVERS DAY!

CATHERINE DONNELLY - CO-DIRECTOR, VERMONT INSTITUTE FOR ARTISAN CHEESE AND THE EDITOR OF THE OXFORD COMPANION TO CHEESE

THE OXFORD COMPANION TO CHEESE
The discovery of cheese is a narrative at least 8,000 years old, dating back to the Neolithic era. Yet, after all of these thousands of years we are still finding new ways to combine the same four basic ingredients - milk, bacteria, salt, and enzymes - into new and exciting products with vastly different shapes, sizes, and colors, and equally complex and varied tastes, textures, and, yes, aromas. In fact, after a long period of industrialized, processed, and standardized cheese, cheesemakers, cheesemongers, affineurs, and most of all consumers are rediscovering the endless variety of cheeses across cultures.

The Oxford Companion to Cheese is the first major reference work dedicated to cheese, containing 855 A-Z entries on cheese history, culture, science, and production. From cottage cheese to Camembert, from Gorgonzola to Gruyère, there are entries on all of the major cheese varieties globally, but also many cheeses that are not well known outside of their region of production. The concentrated whey cheeses popular in Norway, brunost, are covered here, as are the traditional Turkish and Iranian cheeses that are ripened in casings prepared from sheep's or goat's skin. There are entries on animal species whose milk is commonly (cow, goat, sheep) and not so commonly (think yak, camel, and reindeer) used in cheesemaking, as well as entries on a few highly important breeds within each species, such as the Nubian goat or the Holstein cow. Regional entries on places with a strong history of cheese production, biographies of influential cheesemakers, innovative and influential cheese shops, and historical entries on topics like manorial cheesemaking and cheese in children's literature round out the Companion's eclectic cultural coverage.

The Companion also reflects a fascination with the microbiology and chemistry of cheese, featuring entries on bacteria, molds, yeasts, cultures, and coagulants used in cheesemaking and cheese maturing. The blooms, veins, sticky surfaces, gooey interiors, crystals, wrinkles, strings, and yes, for some, the odors of cheese are all due to microbial action and growth. And today we have unprecedented insight into the microbial complexity of cheese, thanks to advances in molecular biology, whole-genome sequencing technologies, and microbiome research. The Companion is equally interested in the applied elements of cheesemaking, with entries on production methodologies and the technology and equipment used in cheesemaking.

An astonishing 325 authors contributed entries to the Companion, residing in 35 countries. These experts included cheesemakers, cheesemongers, dairy scientists, anthropologists, food historians, journalists, archaeologists, and on, from backgrounds as diverse as the topics they write about. Every entry is signed by the author, and includes both cross references to related topics and further reading suggestions. The endmatter includes a list of cheese-related museums and a thorough index. Two 16-page color inserts and well over a hundred black and white images help bring the entries to life.

This landmark encyclopedia is the most wide-ranging, comprehensive, and reliable reference work on cheese available, suitable for both novices and industry insiders alike.

JIM STRIEGEL - RED MARE WINES

Jim Striegel began his love of wine at an early age while making wine with his father.  They shipped a variety of grapes from Napa Valley, California to their hometown of Carbondale, Illinois and enjoyed red table wine with family and friends. Jim enjoyed summers in the Napa Valley areaa with childhood friends when there were only ten wineries in the area, including Stag's Leap.  They would hang out in the vineyards and the cellars, experiencing the rich traditions that come along with it, including the annual "blessing of the grapes".

With over forty years of experience in sales and marketing, Jim has built many successful businesses in the apparel, automobile and real estate industries.  He worked for Izod Lacoste in Paris in the eighties and was able to further his wine education in both the Burgundy and Bordeaux regions of France. When he was ready to begin his own brand, he called renowned winemaker Heidi Barrett.  In addition to being a huge, longtime fan of Heidi's winemaking, he worked with her on a wine dinner in the Dallas area and trusted her advice and guidance.  It was through Heidi that he met winemaker and partner Anne Vawter and the rest is history.

ABOUT WINELA
wineLA is about enhancing the wine culture of Los Angeles. To do so, wine must be in rhythm with fashion, music, food and other beverages.  It must take advantage of the geography, the architecture and the centers of interest. Los Angeles is a giant playground with an amazing array of venues, spaces, wine bars, restaurants, beaches, roof tops, gardens, and magical views. We want to be a part of the LA lifestyle, the wine lifestyle, and celebrate the people, the place and the passion.

wineLA will promote significant events, occasional classes, and tastings of merit. This is phase two of what we started 20 years ago at LearnAboutWine.com - America’s first wine education website and first in wine event creation. LearnAboutWine will now evolve onto a digital platform; the transformation will take some time; so we will slowly rebrand our event efforts onto wineLA, reduce the number of activities we focus on, and elevate our efforts to focus on the next big thing… Doing what is best for the wine industry and the communities we serve.  Edicts:  innovate, evolve and excite.

We thank you for joining our newsletter, we will be sending fewer emails and packing them with amazing content. We want to be your wine content provider and would love to hear about your favorite places, your music, your locations - we want to be under the influence of what ignites your passion for Los Angeles.

ABOUT BEEKEEPER CELLARS
Beekeeper Cellars is the vision of best friends and co-winemakers Ian Blackburn and Clay Mauritson. The two collaborated after adventurous individual careers in the wine business, and at last, decided to work together on a project of their own.

Clay, a 7th generation grape grower, and his family found themselves the owners of a significant slice of the Rockpile Appellation, through an amazing set of historical land transactions. The Mauritson family realized the potential and parented the creation of the ROCKPILE AVA. In 1998, Ian and Clay climbed the hill and watched the Madrone Spring Vineyard get planted, while discussing the future of Rockpile and the dream it represented.

In 2008, Clay saw the fruits of his family's labor taking shape and came to Ian with a unique opportunity to source some of the Rockpile fruit. He told Ian in the difficult days of 2008, “now is the time to get in and build the business and have it take shape as the market improves, and to not wait until business is strong as you will have a hard time getting access to the right quality assets.” Ian took heed of Clay’s wise comment and said "When your best friend is Clay Mauritson and he offers Rockpile fruit and to assist with winemaking…... you make Zinfandel.”

In Los Angeles, Ian operates a specialty wine marketing organization known as wineLA and has pioneered wine education for the past 20 years (since 1995) through www.learnaboutwine.com and www.wineLA.com.  Beekeeper Cellars is also involved in Ian’s Masters of Wine Thesis project and provides him the winemaking training he requires to help pass the difficult Masters of Wine exam...an ongoing pursuit.

CHRISTOPHER CZARNECKI -CHEF/OWNER FROM THE JOEL PALMER HOUSE JOINS US TO CHAT ABOUT SOUP FOR NATIONAL SOUP MONTH

Chef and food expert Christopher Czarnecki shares details of how his family restaurant has been around for 100 years and industry trends in regards to soup.

About Joel Palmer, the Oregon Pioneer
Joel Palmer was one of Oregon’s preeminent pioneers who left Indiana in 1845 to make his long way West. As leader of one of three wagon trains headed for Oregon, Palmer soon exhibited the leadership qualities for which he became famous. Joel Palmer co-founded the town of Dayton in 1848 and built this home in 1857. It is said that the town of Dayton is named after the hometown of Chris Taylor, a close friend.

The Czarnecki Family
Our family business took shape when my great-grandfather, Joseph Czarnecki, opened Joe’s Tavern in 1916 in Reading, Pennsylvania. His son, Joseph Jr., carried on the tradition, transforming the original tavern into Joe’s Restaurant and changing the focus to fine dining and wine with wild mushrooms (a family passion) as the centerpiece. My father, Jack Czarnecki, followed in his father’s footsteps, taking Joe’s Restaurant to a new level while maintaining the mushroom theme. My parents’ dream to combine fine cuisine, great mushroom hunting, and world-class wine was fully realized in 1996 when they purchased The Joel Palmer House and moved the restaurant West.

Christopher Czarnecki's commitment to fine dining was imprinted on him early, literally from the age of 9, when he was allowed to fill the water glasses at his parents' restaurant - originally called Joe’s Restaurant and located in Reading, PA and now, The Joel Palmer House, a landmark in Oregon's wine country. The world of his childhood was a world of fresh local ingredients, fine wines, busy kitchens, and grateful, happy diners – a world he knew he would inhabit as an adult. Czarnecki stepped out of that world for three years in 2003, when he joined the Army, working in food service, including a year of service in Iraq. During the time when Christopher was “cooking in combat boots” he learned the art of precision, and of course, following the rules. Christopher’s covert attempt at spicing up a dish with herbs and butter at one dinner only earned him 50 pushups, rather than the certain gratitude of his comrades. Chris regards his time in the dining hall as a learning opportunity, and was happy to return to a region where his creativity is fed and supported by the abundance of the area. Beginning in 2006, Christopher made his way back to The Joel Palmer House kitchen, taking over the reins from his father, Jack Czarnecki, as chef in 2007. His parents retired in 2008. In 2014, Chris and his wife, Mary, opened their 2nd restaurant, "The Barlow Room" in Dayton. Designed from the ground up to complement The Joel Palmer House, this new venue is open for lunch, on Sundays, and for special events and catering. The historic bar, casual menu, family friendly atmosphere, craft beers and cocktails make this the go-to local hang out for locals and winery folks. Czarnecki revels in the bounty of the restaurants' location in Dayton, in the heart of Oregon's Pinot Noir country. Czarnecki continues the family tradition of cooking with wild mushrooms, building his menu around whatever local mushrooms his foragers bring to the back door of the kitchen, along with other seasonal specialties. Czarnecki and his wife, Mary, are building their own vegetable gardens in order to provide “hyper-local” produce to the restaurant as well as a mushroom cultivation patch on the property. On the wine side, the cellar at The Joel Palmer House reflects Czarnecki's passion for the best local wines. With more than 500 Oregon Pinot noir wines on the list, and a Wine Spectator “Best of” Award of Excellence since 2010, Christopher often spends time in the cellar with a glass of Pinot noir reflecting on the life he’s built in The Joel Palmer House.

01/13 LAKERS DIET DOCTOR CATE SHANAHAN, DEEP NUTRITION: WHY YOUR GENES NEED TRADITIONAL FOOD, KEVIN DELANEY, SCIENCE CHANNEL’S NEW SERIES STREET SCIENCE, STEVE EVANS, THE MOVIE GUY

LAKERS DIET DOCTOR CATE SHANAHAN – HERE TO EXPLAIN WHY VEGETABLE OIL IS YOUR BRAIN’S WORST ENEMY

You’ve heard of the cover-ups in the tobacco and sugar industries that prevented the public from learning about the toxic effects of these two products. There’s one more giant industry cover-up you haven’t heard about yet.

Vegetable oil—canola oil, soy oil, corn oil and more. Over the past half century, without anyone noticing, these highly processed industrial products have gradually taken over our diets and become the mainstay of the family meal. The most common vegetable oil is soy, and today the average American consumes nearly 2000x the amount of soy oil as in 1909.

DEEP NUTRITION: Why Your Genes Need Traditional Food (Flatiron Books; Hardcover; January 3, 2017) by Lakers Diet Doc Cate Shanahan, MD with an assist from Luke Shanahan is the antidote. It shows exactly how vegetable oil slowly but inevitably erodes away your health, how vitally healthy people were not too long ago, and paves the way for you to reclaim the health you deserve.

Once a world-class athlete plagued by debilitating injuries, physician and biochemist Cate Shanahan was determined to cure her own ailments. So she researched the diets from around the world proven to help people live longer, healthier lives—diets like the Mediterranean, Okinawan, and The Blue Zones—and identified four common nutritional habits that for generations have unfailingly produced strong, healthy, intelligent children, and active, vital elders.

These four nutritional strategies form the basis of what Dr. Cate calls “The Human Diet”:
·       Fresh food
·       Fermented and sprouted foods
·       Meat cooked on the bone
·       Organ meats

Not all food is created equal. Real food contains ordered information that can direct our cellular growth in a positive way. Our family history does not determine our destiny. What you eat interacts with your DNA in ways that affect your health and the health of your future children.
By adhering to this Human Diet, Dr. Cate cured her own ailments and has since helped countless patients and readers of the original self-published edition of DEEP NUTRITION achieve their own optimum health.

Cutting through conflicting nutritional ideologies, DEEP NUTRITION combines science with common sense to illustrate how the traditions of our ancestors can help us all lead longer, healthier, more vital lives.

Catherine Shanahan, M.D. is a board certified family physician. She trained in biochemistry and genetics at Cornell University before attending Robert Wood Johnson Medical School. She practiced medicine in Hawaii for a decade, where she studied enthnobotany, as well as the culinary habits of her healthiest patients. She currently runs a metabolic health clinic in Denver, Colorado and serves as the Director of the Los Angeles Lakers PRO Nutrition Program.

LEON GRICE - NEW ZEALAND CONSUL-GENERAL, LOS ANGELES - TALKING NEW ZEALAND WINES

ABOUT NZ WINE:
New Zealand is a land like no other. New Zealand Wine is an experience like no other. Our special combination of soil, climate and water, our innovative pioneering spirit and our commitment to quality all come together to deliver pure, intense and diverse experiences. In every glass of New Zealand Wine is a world of pure discovery. Welcome to our world.

Regions
New Zealand extends 1,600km (1000 miles) from sub-tropical Northland (36° S) to the world’s most southerly grape growing region Central Otago (46° S). Vineyards benefit from the moderating effect of the maritime climate (no vineyard is more than 120km, or 80 miles, from the ocean) with long sunshine hours and nights cooled by sea breezes.

New Zealand wine is distinctive for its purity, vibrancy and intensity. The long ripening period - a result of cool temperatures - allows flavour development whilst retaining fresh acidity, a balance for which New Zealand wines are renowned. There are a number of distinct major winegrowing regions spread throughout New Zealand, with the majority on the East coast of the Islands in the rain shadow of the mountains. Within these diverse regions, sub-regional characteristics are beginning to show through and wines are now being distinguished as being not just from a wine region, but from a sub-region and a place. We hope you enjoy discovering our regions and producers.

Wine Styles
New Zealand produces less than 1% of the world’s wine, yet offers an impressive array of varieties and styles. Central to our success is New Zealand’s temperate, maritime climate, the unswerving passion of our wine producers and the highly distinctive nature of our wine styles.

It was Sauvignon Blanc that put New Zealand on the wine map, however the diversity and sophistication of our portfolio of wine styles has ensured the love affair with New Zealand wine lives on around the world.

New Zealand's expansive coastline enables us to succeed with a range of diverse varieties and styles; from the warmer climate wines, such as Bordeaux-style blends and Syrah, grown in Hawke's Bay and further north, through to much cooler climate wines, such as Pinot Noir and Riesling grown in the southerly regions.

Whatever your preferences for wine styles, chances are we have a New Zealand Wine to suit your palate.

ACTOR JOE MANTEGNA - CRIMINAL MINDS RETURNS WITH ALL-NEW EPISODES, WEDNESDAY, JAN. 4

CRIMINAL MINDS returns with all-new episodes, Wednesday, January 4, 9:00-10:00 PM EASTERN!

AS ROSSI CONDUCTS A PROFILING COURSE ON HIS BIRTHDAY, HE RECEIVES A CALL FROM HIS SERIAL KILLER NEMESIS TELLING HIM THE LOCATION OF HIS LATEST VICTIM, ON “CRIMINAL MINDS,” WEDNESDAY, JAN. 4

“Profiling 202” – As Rossi (Joe Mantegna) conducts a profiling course on his birthday, he receives a call from his serial killer nemesis, Tommy Yates (Adam Nelson), telling him the location of his latest victim, on CRIMINAL MINDS, Wednesday, Jan. 4 (9:00-10:00 PM, ET/PT) on the CBS Television Network.

CRIMINAL MINDS revolves around an elite team of FBI profilers who analyze the country’s most twisted criminal minds, anticipating their next moves before they strike again. The Behavioral Analysis Unit’s most experienced agent is David Rossi, a founding member of the BAU, who is essential in helping the team solve new cases. Other members include Special Agent Emily Prentiss, the daughter of high-powered diplomats who returns to the team after being the head profiler at Interpol; Special Agent Dr. Spencer Reid, a classically misunderstood genius whose social IQ is as low as his intellectual IQ is high; Jennifer “J.J.” Jareau, the team’s former unit liaison-turned-profiler who juggles motherhood and marriage with the same skill as solving cases; Penelope Garcia, the team’s indispensable computer wizard who helps research the cases with her unique charm; and Dr. Tara Lewis, a forensic psychologist whose expertise is studying and interviewing serial killers after they’re captured to determine if they are able to stand trial. New to the unit are Luke Alvez, a former Army ranger and excellent tracker recruited from the FBI’s Fugitive Task Force, and Stephen Walker, a seasoned profiler from the Behavioral Analysis Program who brings with him his spy-hunting skill set. As the team evolves together, the BAU continues its dedication to using their expertise to pinpoint predators’ motivations and identify their emotional triggers in the attempt to stop them.
