He spent the early part of his career developing state of the art semiconductor fabrication technologies for Hewlett-Packard in Fort Collins,CO. In search of warmer weather, Dan made his move to sunny California where he joined Vitesse, a small high tech startup company, developing and manufacturing  semiconductor technology for the supercomputer and telecommunications industries. A love for wine started Dan on a journey that took on a life of its own, in a kind of "if you give a mouse a cookie" kind of way. Drinking wine led to learning about wine; led to learning about winemaking; led to making wine as a home winemaker; led to planting a small 200 vine vineyard in his backyard; led to obtaining a Winemaker's Certificate from the UC Davis Distance Learning program; led to falling in love with Sta. Rita Hills; led to buying a 40 acre parcel and planting a 30 acre vineyard; led to, well, where he is today.



ROGER BERKOWITZ - CEO & PRESIDENT, LEGAL SEA FOODS   

Today we talk about Oysters and the wives-tale that indicated they should not be served during months with NO R in them.  TRUE OR FALSE?   

Legal Sea Foods was born in 1950 when George Berkowitz opened a fish market in the Inman Square neighborhood of Cambridge, Massachusetts.  He opened it adjacent to his father Harry’s grocery store Legal Cash Market where customers were given “Legal Stamps” (forerunners of S&H green stamps) with their purchases.  It’s here that the “Legal” name became synonymous with quality and freshness.

In 1968, the Berkowitz family opened its first seafood restaurant, right next to the fish market.  The fish was simply prepared, either broiled or fried, and served on paper plates at communal picnic tables.  Despite the low-key trappings, the food was second to none and word quickly spread.  This early success led to further expansion and now, six decades later with restaurants along the Eastern Seaboard, the family philosophy endures: Legal Sea Foods is a fish company in the restaurant business.

George's son, Roger, has been at the helm since 1992 and has expanded the business into new markets while maintaining the company's focus on its proud tradition and core values.  So when we say, "If it isn't fresh, it isn't Legal!," we renew a commitment that has sustained us for over a half-century. Honore Comfort, joined the Sonoma County Vintners as Executive Director in 2006.  Formerly with Foster’s Wine Estates, Ms. Comfort brings an extensive background in wine marketing, consumer marketing, and not-for profit management to the organization.  As Group Brand Manager for Luxury Imports for Fosters, Ms. Comfort was responsible for marketing major wine brands to the North American market including Penfolds and Wynn’s along with other boutique luxury brands.  Prior to the merger with Foster’s, she managed the Rosemount Estate brand for Southcorp Wines and was responsible for a 2 million case business in the US, Canada, and Latin America. She started her wine career as Director of Marketing for a small, family owned winery in Sonoma County’s Dry Creek Valley.

Ms. Comfort gained her marketing and advertising expertise while working as Director of Print Media for Macy’s West in San Francisco.  Her career also includes four years as a successful strategic planner and corporate fundraiser for the Art Institute of Chicago, and other non-profit museums and institutions around the United States. Honore has a Master of Business Administration and a Master of Arts Administration both from Southern Methodist University in Dallas, and a Bachelor of Arts in Art History from the University of California, Berkeley.  Ms. Comfort lives in Healdsburg with her husband, and together they manage their micro-vineyard of 40 year-old Dry Creek Valley Cabernet.

KATIE MADIGAN - ST. FRANCIS WINEMAKER & JENNIFER DASKEVICH – CONTEST WINNER OF  “SAY CHEESE” GOURMET GRILLED CHEESE RECIPE CONTEST



Sonoma County’s winemaking pioneer St. Francis Winery turned up the heat on an American classic with a gourmet grilled cheese recipe contest that awarded a trip to the winery and a four day stay in Sonoma County. Entrants of the contest, which ran from February 1st to April 31th, 2013, were required to submit an original recipe to the contest app on St. Francis’ Facebook page, pair it with their favorite St. Francis wine and post a photo of it. The winner was selected from the top ten most popular entries, which were judged on creativity, originality, overall taste, ease of replication of recipe, and how well the flavors of the sandwich paired with a St. Francis wine.  Chef and cheese expert Jason Sobocinski and St. Francis Winemaker Katie Madigan were the final judges. Both Jason Sobocinski and Katie Madigan each cooked the top ten entries and chose Jennifer Daskevich from Los Angeles, CA and her Best Bistro grilled cheese recipe as the contest winner. 


CLAY FRITZ – PRESIDENT OF FRITZ CELLARS


Clayton B. Fritz is the President of Fritz Cellars. A San Francisco native, he is the son of winery founder Jay Arthur Fritz and grew up playing in the vineyards and woods surrounding the winery. After graduating from the College of the Holy Cross, he spent several years working at start-ups and making wine during the summer.

Eventually his love of wine took over and he came back to work harvest at Fritz and never left. At Fritz he has focused on expanding the offerings they produce at their unique subterranean facility, while maintaining a viticultural passion for sustainability, quality, and tradition.

Clay is a board member of the Wine Growers of Dry Creek Valley and a board member of the Sonoma County Vintners Cooperative. Clay is married to Natalia Valpredo and they have three children: Buchannon, Bianca and Leonardo.

CHUCK JONES – JONES COFFEE

Chuck’s passion for coffee stems from his coffee producing family in Guatemala. He not only exported and imported this coffee from Finca Dos Marias, but also sold and distributed it to specialty roasters around the country. In 1994, Chuck started roasting coffee for the local consumer market in Pasadena as Coffee Roasters of Pasadena now Jones Coffee Roasters. Jones is a wholesale/retail roaster.

Chuck has said that he is in the business of putting people into business. Working with his retail clients to build quality-based campaigns has been his hallmark for success. Jones Coffee Roasters own retail program has been the testing ground. With an annual advertising budget of less than $100, Chuck has demonstrated how a few marketing techniques can make the difference, make the community very happy and achieve success in the retail specialty coffee market..

Chuck has been active in the Specialty Coffee Association of America (SCAA). He Chaired the Membership Committee for three years; Chaired the Awards Committee for two years; Annual Conference Committee Facilitator for three years; and an Instructor for Sensory Evaluation and Espresso Lab Workshops. In addition to this, Chuck was in the Sustainable Criteria Group II at the First Sustainable Coffee Congress in 1996. He has been a Presenter at the Coffee Association of Canada, on panels for Family Businesses and Marketing Guatemalan Coffee. In 1996, he co-authored a book entitled “Achieving Success in the Specialty Coffee Business”. Chuck has been a USBC Judge and has really enjoyed the retail aspect of the coffee industry.

In 2005, Jones Coffee Roasters went into the espresso business and added a full service retail component to their business. Having had the experience of assisting and training café customers to set up their retail stores, he now faced his own challenge that has been very successful.

Today, Jones has a satellite in the West Hollywood new library building and is roasting for Caltech, JPL, Cafes on the USC Campus, Lemonade in addition to many wonderful boutique restaurants and cafes. He is here to share with us his story and the world of coffee!

07/22 Cole Carley, BBQ Bootcamp

COLE CARLEY - BBQ Bootcamp

BBQ Bootcamp is a collaborative effort of animal scientists in NDSU's Animal Science Departmentand agents from the NDSU Extension Service.  BBQ Boot Camps are held in various locations during the summer.

Participants learn about:

--  New cooking methods and practices

--  Meat cut selection

--  Rubs, marinades and seasonings (click for recipes)

--  Food safety and nutrition

--  Smoking, gas and charcoal cooking

--  Meat industry topics, including related research, teaching and Extension activities at NDSU

BBQ Boot Camp instructors introduce participants to grilling methods, including smoking and cooking with gas and charcoal. Instructors will describe the merits of various meat cuts and explain how cooking temperatures, humidity and the composition of the meat from different animal species can affect the barbecuing process. Participants also will learn about nutrition, food safety and techniques such as using rubs, marinades and seasonings.

Faculty will share information on current topics in the pork, beef and lamb industries and report on related research, teaching and Extension activities at NDSU.

"The program highlights many different aspects of agriculture from meat cookery to the importance that producers place on meeting high product quality standards," says David Newman, NDSU Extension swine specialist and one of the BBQ Boot Camp organizers.

The camps wrap up with a full meal, including traditional barbecue side dishes. Participants will be able to fill their plates with a large variety of barbecued meat.

"You definitely won't leave hungry," says Eric Berg, a professor in the Animal sciences department and a BBQ Boot Camp instructor.

Animal sciences department and Extension faculty, staff, and graduate and undergraduate students are the instructors for the camps.

Larry Manetti started acting in his of hometown Chicago. After studying acting with the Ted List Theater Players, Larry drove to Los Angeles in 1972. Larry landed an agent and was sent to Universal Studios to audition for an opening as a contract player. Luck was on his side. Jack Webb was casting a new series for NBC called The Chase. Larry played a young detective. After attending acting school at Sal Dano's at night and doing bit parts by day, he scored. Baa Baa Black Sheep was being produced and cast at Universal, and the now famous writer Stephen J. Cannell was the executive producer and the role was a natural for Larry. He was cast as a cocky, hot shot pilot named Bobby Boyle. The show was a big hit for NBC but was cancelled within two years. Because the network was so impressed with Larry's on-screen presence, they cast him in a new series called The Duke. Bad luck! The Duke was cancelled in one year. Larry was back to playing whatever Universal told him to. Hoping to catch lighting in a jar, along came Magnum, P.I. And the role of Rick. This was his elevator...the show became a mega-hit for 8 years. Since Magnum, P.I., Larry has done co-starring roles in 25 feature films and guest starred on many hot TV shows. Larry is the author of a book titled Aloha Magnum.

Arielle Kebbel (“Vampire Diaries”) hosts the CW’s new dating reality show, “Perfect Score” premiering Tuesday, July 16!  Fan-favorite actress Arielle Kebbel is the host on The CW’s new dating game show “Perfect Score.”
A natural talent with a striking screen presence and an undeniable personality, Arielle Kebbel made her mark in Hollywood at just 17, playing the recurring role of Lindsay Lister on the hit series “Gilmore Girls,” a part she won within two days of arriving in Los Angeles from Florida. A recognized food blogger and columnist, New Orleans native Gisele Perez, is an established chef in Los Angeles, California, with her company, Small Pleasures Catering.  Immigrating to Los Angeles from New Orleans as a child, Gisele grew up traveling back and forth between the two cities, which instilled in her a love for New Orleans that has become an integral part of her life and career.  A graduate with honors from the renowned California Culinary Academy, Gisele worked in some of the finest hotels, restaurants and catering companies in New York and San Francisco before returning to Los Angeles and starting her catering company in 1997.  While some of her catering specialties may not be New Orleans-specific, everything she cooks, every buffet decorated, is influenced by it. When Gisele is in her kitchen she is constantly reminded of her grandmother, at whose knee she stood as a young child, questioning her as she cooked for her large family. Gisele has been featured in numerous regional publications and on local television.

She swam with sharks in Bora Bora, hang-glided over the beaches in Brazil, paraglided off a mountain in Alaska and spent two weeks on a safari in Africa.

Brown also cave-dived in the Cenotes sinkholes of Mexico, swam with alligators in the Florida Everglades, hung with the KGB in Russia and drove a Bugatti across the country in the Great America Run.

An athlete at heart, Brown’s competitive nature began at an early age when she took up sports at 3 years old. Her parents, both former Olympic gymnastics coaches, instilled in her a passion for sports. She attended the University of Florida on a full academic scholarship and played four years on the Florida Gators softball team, ultimately serving as its senior captain.
Brown currently lives in Los Angeles with her husband, Wes Chatham.

Bruce Kraig is a well-known food historian in the United States who can pretty much provide background on a wide variety of foods from their conceptions, word origins, and variations throughout the US or regional importance.  Most importantly, he is frequently asked to speak at numerous events featuring the eponymous hot dog! Given the importance of the Hot Dog in US culture, its numerous variations and limitless toppings and regional variations, the hot dog (wiener, red hot, tube steak, etc) is a fun and exciting food stuff to talk about!  Everyone can partake as there are gluten-free dogs, turkey dogs, vegetarian dogs, and more!  What's more exciting is there is a lot of pride people take in their hot dogs.

Kosta Browne has bolstered its new estate program with the purchase of its first vineyard, a key 20 acre block from the highly acclaimed Keefer Ranch, located in the Russian River Valley appellation.

The acquisition of Keefer Ranch comes on the heels of the winery securing a long term lease of 37 acres from the Gap’s Crown Vineyard, and now further expands the Kosta Browne’s new estate wine program.

ROBERTA WILSON - "COOKIES FOR A KOZ"

Roberta Koz Wilson didn’t start out making cookies for a living. She graduated from UCLA and quickly rose through the ranks at MTV Networks. When she left her career in 2004, after much soul searching and schedule juggling, she was the Vice President of Affiliate Sales and Marketing.
While Roberta and her brother, Jazz musician Dave Koz knew all about great cookies, the real cookie magician in Roberta’s family was her mom, Audrey. She was a pharmacist by trade (when women were not working much out of the home, let alone in pharmacies), and a true “angel on earth” at heart whose cookies were legendary.

When Audrey died suddenly in 2005, leaving “a void in the universe,” Roberta found herself not only at a crossroads in search of a new career challenge, but also in a position to honor the legacy of her beloved mother…

“I started my business, Cookies For A Koz (the “cause” being the Starlight Foundation–Audrey’s favorite charity), initially as an online gift business. About two years ago I decided to branch out into the wholesale business.  This was a HUGE learning curve for me as it was a whole different animal than my small online business that I was doing all the baking for.  I had to learn about manufacturing and packaging, and develop a version of my recipe that could have a six-month shelf life for retail. My first deal came about 1 1/2 years ago with Home Goods who agreed to carry four flavors of my cookies.  I felt from the minute I received that news until the time the cookies finally got on the shelves in their 400+ stores that I took a crash course in business school…there was that much learning involved!

The biggest lesson was that you don’t have the same fears when starting a new career at 50+ as you do as when you’re much younger and starting out. I was fortunate to have a ‘what have I got to lose’ attitude which made me feel more fearless. I asked lots and lots of questions, and people were very generous with sharing their knowledge.

I now know it is possible to reinvent yourself in midlife if you find something you are passionate about. If you have the will and determination, you will figure out how to do it. The thing to remember is not to get overwhelmed with the entirety of the project, but to take small steps every day toward your end goal–mini successes give you the fuel and inspiration to continue to move forward.”

The creation and growth of this business also created a positive learning experience for Roberta’s daughters, ages 20 and 18. They know that she left a rewarding career because at a certain point it didn’t allow her to maintain the priorities that she had set for herself.  They are very proud of their mom’s encore career. (They also love the charity component and that Cookies For A Koz  honors Audrey, whom they adored.)  Roberta says, “They have learned along with me what it takes to grow a small business from the ground up once you roll up your sleeves and get to work.”

Things are finally coming together for Roberta’s business: “We are going into the Gelson’s grocery store chain in Southern California this week and I hope over the next year to be in TJ Maxx and Marshall’s stores. I like to joke now that I’ve never worked so hard to make so little money–but I truly love it and hope that one day all the hard work will pay off, and that the Starlight Foundation will continue to benefit from even more profits. I feel passionate about what I am doing. I know my mom is smiling ear to ear and sitting on my shoulder helping me to take the next steps in my business.”

Steve Raichlen - Culinary Writer, TV Host, and Novelist

Steven Raichlen is an American culinary writer, TV host, and most recently novelist. Born March 11, 1953, in Nagoya, Japan in Japan and raised in Baltimore, Maryland,  Raichlen graduated in 1975 from Reed College with a Bachelor of Arts in French literature.  He received a Thomas J. Watson Foundation Fellowship to study medieval cooking in Europe, and was offered a Fulbright Scholarship to study comparative literature. He trained at Le Cordon Bleu and La Varenne cooking schools in Paris.  Raichlen lives with his wife, Barbara, in Coconut Grove, Florida and Martha's Vineyard, Massachusetts.

Since 1998, Raichlen's books have focused on the culture and practice of global grilling. His 28 books include The Barbecue Bible (1998, revised in 2008), How to Grill (2001), BBQ USA, Miami Spice, and Healthy Latin Cooking. His books have been translated into 15 languages. Raichlen also wrote Planet Barbecue!, the story of his travels to more than 50 countries in search of the best barbecue, published by Workman Publishing in 2010.

Raichlen currently hosts Primal Grill (American Public Television, 3 seasons, 2008–present). According to the show's Web site, the new series focuses on the "how-tos" of live fire cooking, employing different grills for each technique, including South American methods on large wood-fired Grillworks models. Raichlen, who holds a degree in French literature from Reed College, also hosts a French-language TV show called Le Maitre du Grill on Zeste in Quebec. Raichlen created the TV show Barbecue University (aka BBQ U, American Public Television, 4 Seasons, 2003–2006).

Raichlen is the founder of Barbecue University, which offers three-day intensive courses on live fire cooking at the Broadmoor Resort in Colorado Springs.

Steven Raichlen has won five James Beard awards for his cookbooks. More recently his 780-page book, BBQ USA, won the 2004 award for Tools and Techniques. In 2003, Bon Appetit named Raichlen “Cooking Teacher of the Year," the same year that The Barbecue Bible, based on his four years of research while traveling 150,000 miles through 25 countries on five continents, won an IACP Julia Child Award.

Originally from Baltimore, Raichlen has been known to further careers of such barbecue pitmasters thanks to his writing. One being Wayne Mark Schafer, of Baltimore's Pit Beef fame Big Fat Daddy's who was featured in Raichlen's NY Times Article and 425 Fiery Recipes Book.

He battled and defeated Iron Chef Rokusaburo Michiba in a "Battle of the Barbecue Gods" on Japanese television. Raichlen has written for The New York Times, National Geographic Traveler, Food and Wine, "Bon Appetit" andHemispheres magazines.He has appeared on numerous television programs and networks including Good Morning America, The Today Show, CBS This Morning, Discovery Channel, Oprah, Regis & Kelly, The View and CNN.
