Eating meat doesn’t have to be politically incorrect. In fact, it can actually improve your health, protect our environment and strengthen our farm communities. And, according to award-winning author Deborah Krasner, it tastes good, too. The meat Krasner is referring to is the grass-fed, sustainably farmed and humanely raised products increasingly available from local producers. In her new book, Good Meat: The Complete Guide to Sourcing and Cooking Sustainable Meat, Krasner provides the meat-eater’s equivalent to the Whole Earth Catalog—a complete and comprehensive guide to sourcing, preparing and enjoying sustainably raised beef, lamb, pork, rabbit, poultry, and eggs.  While the 200 recipes and dozens of beautiful color photographs delight the senses, the real meat of this book (pun intended) is its encyclopedic breadth and depth: Krasner argues persuasively against the “industrial” meat found in most supermarkets and chain restaurants, and sets forth a compelling case why sustainably farmed meat can actually lower cholesterol, enhance the environment, empower farmers and sustain the community supported agriculture (CSA) movement.  Krasner is a well known Vermont-based food writer and James Beard Award-winner who approaches her topic with a combination of intellectual rigor and culinary passion. Good Meat is most definitely not another cookbook; it is part how-to guide, part environmental manifesto, part textbook, and mostly a celebratory exploration of the benefits and virtues of responsible meat-eating.
